Cheesecake Cookie Dough Bars

Prep time: 15 mins | Cook time: 30 mins | Serves: 15 bars

I have a huge love for cookies. They are easy and fun to make and versatile. Just like these Cheesecake Cookie Dough Bars. Soft, chewy, yummy, and pretty simple.

Ingredients

CRUST:

1 – 1/2 cups graham cracker crumbs

1/3 cup melted butter

2 tablespoons sugar

FILLING:

1 – 8 ounces cream cheese, softened

1/3 cup sugar

1 Egg

1 teaspoon vanilla extract

COOKIE DOUGH:

1/3 cup butter, softened

1/4 cup sugar

1/4 cup dark brown sugar

1 teaspoon vanilla extract

3/4 cup flour

2/3 cup chocolate chips, (or milk chocolate)

pinch of salt

How to make Cheesecake Cookie Dough Bars

Step 1: Prepare the oven. Preheat it to 325 degrees F.

Step 2: Combine the graham cracker crumbs, butter, and sugar to make the crust.

Step 3: Into the bottom of a greased 9 x 9-inch baking pan, firmly press the crust. Place inside the preheated oven and bake for about 5 minutes.

Step 4: Cream the cream cheese and 1/3 cup sugar. Add in the egg followed by the vanilla, then mix well until incorporated.

Step 5: Evenly spread this over the graham crumb crust.

Step 6: Combine well the butter, sugar, brown sugar, and vanilla extract.

Step 7: Add in 3/4 cup flour and salt and fold until just a dough forms. Then, stir in the chocolate chips.

Step 8: Make handfuls of the cookie dough in balls, breaking them off into small nuggets and placing them evenly on top of the cheesecake layer.

Step 9: Place inside preheated oven and bake for about 30 to 35 minutes until the top of cookie dough starts to brown.

Step 10: Remove from the oven and allow the cookie to completely cool in the pan before slicing into bars or squares.

Step 11: If not freezing, store the bars in an airtight container.

Note:

Use a 9 x 9-inch pan for thicker bars or a 9 x 13-inches pan is okay.
