CHEESECAKE COOKIE DOUGH BARS

Prep Time: 15 mins | Cook Time: 30 mins | Yield: 15 bars

Crumby pecan crust, creamy cheesecake, with a chocolate chip cookie dough. A bite of everything in one!

Ingredients

CRUST:

1 – 1/2 c graham cracker crumbs

1/3 c melted butter

2 tbsp sugar

FILLING:

1 – 8 oz cream cheese, softened

1/3 c sugar

1 Egg

1 tsp vanilla extract

COOKIE DOUGH:

1/3 c butter, softened

1/4 c sugar

1/4 c dark brown sugar

1 tsp vanilla extract

3/4 c flour

2/3 c chocolate chips, ( or milk chocolate )

pinch of salt

HOW TO MAKE CHEESECAKE COOKIE DOUGH BARS

Step 1: Ready the oven. Preheat it to 325 degrees F.

Step 2: Combine the butter, graham cracker crumbs, and sugar in a large mixing bowl until well mixed.

Step 3: Grease a 9 x 9-inch baking pan with cooking spray.

Step 4: Pace the mixture into the prepared baking pan, pressing the mixture hard on the bottom.

Step 5: Bake in the preheated oven for about 5 minutes.

Step 6: Once done, remove from the oven and set aside.

Step 7: Add 1/3 cup of sugar and cream cheese in a small mixing bowl. Mix well.

Step 8: Stir in the vanilla and egg until incorporated.

Step 9: Pour the mixture over the crust and evenly spread.

Step 10: Add the sugar, butter, vanilla extract, and brown sugar in a large mixing bowl. Whisk until incorporated.

Step 11: Add in the salt followed by 3/4 cup of flour. Whisk until the mixture becomes a dough.

Step 12: And fold in the chocolate chips.

Step 13: Shape small balls and sprinkle the remaining bits of dough over the cheesecake layer.

Step 14: Bake in the preheated oven for about 30 to 35 minutes or until brown.

Step 15: Once done, remove from the oven and allow to cool at room temperature.

Step 16: Slice the cookie dough bar into small squares and store them in an airtight container.
