Cheese Stuffed Taco Meatloaf

This homemade taco meatloaf is everything you need today. Perfectly seasoned lean ground beef filled with spicy pepper-jack cheese, then combined with fiesta seasonings and crushed Doritos. This insanely delicious fiesta dish leaves me speechless!

Ingredients

2 ½ pound lean ground beef 90/10

1 ½ c. taco sauce divided

⅔ c. crushed nacho cheese-flavoured Doritos divided

1 1.25 ounces packet taco seasoning

1 medium sweet onion finely diced

1 teaspoon cumin

1 teaspoon lemon pepper

1 teaspoon garlic powder

1 teaspoon Mexican oregano

2 large eggs beaten

1 8-ounces block pepper-jack cheese, sliced into 14 even slices

1 c. shredded pepper-jack cheese

How to make Cheese Stuffed Taco Meatloaf

Step 1: Prepare the oven. Preheat it to 350 degrees F. And using oil, lightly grease a 10-inch cast-iron skillet or similar.

Step 2: Add the ground beef, ½ cup taco sauce, ⅓ cup crushed Doritos, taco seasoning, onion, cumin, lemon pepper, garlic powder, oregano, and eggs in a large mixing bowl. Combine using your hands until everything is completely mixed.

Step 3: Into the prepared skillet, press half of the meatloaf mixture. Over the meat, gently press the slices of pepper-jack cheese at last half inch from the edges, then top with the rest of the meatloaf mixture. And over the meat, spread a half cup of the taco sauce. Place in the preheated oven and bake for about 40 minutes.

Step 4: Remove the meatloaf from the oven after 40 minutes of baking and spread the rest of the half cup taco sauce on top, then sprinkle with a cup of shredded cheese and the rest of the crushed Doritos. Return to the oven and continue to bake for 20 to 30 minutes more or until the meatloaf is cooked through and no longer pink.

Step 5: Let the meatloaf rest for at least 10 to 15 minutes before slicing. Enjoy!

Note:

If desired, you can swap half tsp of the Italian oregano with Mexican oregano.
