My daughter is obsessed with these cauliflower fritters or pancakes as she always says. It’s a fun and healthy way to make your picky eaters eat veggies. These fritters are packed with vitamins and no doubt delicious! Your kids can’t even tell the difference!
Before these fritters, I cannot force my kids to eat cauliflower! They hate veggies, so I always find a way to let them eat healthily. When I first made these cauliflower fritters, I was not sure if they will like these. Surprisingly, they did! From then, I make sure to always whip up a big batch because these go so fast! I don’t mind making a huge batch as these cauliflowers are healthy, packed with antioxidants, and high in fibre. So, if you are watching your diet, these are perfect, too!

Ingredients
olive or canola oil
1 head cauliflower or a 16 oz bag of frozen cauliflower
1/4 c. Parmesan cheese
1 c. shredded cheddar cheese
2 large eggs
1 c. bread crumbs panko or Italian, I used panko
1/2 teaspoon cayenne pepper more or less to taste
1/4 tsp garlic or onion powder
1/2 tsp Italian seasoning optional
1/2 tsp salt
1/4 tsp pepper
How to make Cauliflower Fritters
Step 1: Cook the cauliflower florets in boiling water for about 8 to 10 minutes or until tender. When done, drain and transfer the florets to the food processor. Pulse until you have a texture of rice. Alternately, you can use a knife to do this.
Step 2: Mix the minced cauliflower with the cheeses, eggs, breadcrumbs, and seasoning,
Step 3: Coat a hot skillet over medium/high heat with about half-inch oil. Into around 3-inches across, shape the cauliflower mixture into patties. Cook for approximately 3 to 4 minutes on each side until golden brown.
Step 4: Serve the cauliflower fritters with sour cream or your preferred dipping sauce. Enjoy!
