Cauliflower Fried Rice

COOK TIME: 10 mins | TOTAL TIME: 20 mins | SERVINGS: 4

If you love fried rice and looking for an alternative, this low-carb Cauliflower Fried Rice is your best option. So good your kids will love this, too! This is an amazing side dish, or make it a meal with Chicken, Shrimp, or beef.

Ingredients

1 Bag Bag of frozen Trader Joes Riced Cauliflower or a head of cauliflower chopped up and “riced” in a food processor (let it sit on the counter for a few minutes so that it is slightly thawed…bang it a little to break up the chunks, you will need about

1½ cups chopped)

2 tbsp sesame oil (you can use canola if you don’t have sesame)

1 Small onion (chopped)

1 c. frozen peas and carrots (thawed)

1/4 c. broccoli (chopped)

3 tbsp soy sauce

Salt and pepper

Garlic salt (optional)

1 Egg

How to make Cauliflower Fried Rice

Step 1: In a large skillet, heat oil over medium-high heat.

Step 2: Once the oil is hot, saute the onions until tender. Then, add in the peas, carrots, and broccoli. Continue to cook until soft.

Step 3: Into the pan, add the frozen cauliflower or fresh riced cauliflower. Combine with the vegetables and saute until not anymore frozen.

Step 4: Add in about 2 tbsp soy sauce and mix well.

Step 5: To one side of the skillet, slide the rice and add the scrambled egg on the other side.

Step 6: Mix the cooked egg with the rice. Add in extra soy sauce according to taste and stir.

Step 7: Season with salt, pepper, and garlic salt.

Step 8: When done, serve immediately. Enjoy!
