Make mornings less hectic with these easy and quick breakfast stuffed biscuits. This delicious make-ahead brekkie will keep you full for the entire day. Grab-and-go or enjoy with a cup of freshly brewed coffee on a Sunday morning.

Ingredients

Biscuits

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon kosher salt

1 stick unsalted butter, cubed

1 cup shredded cheddar cheese, divided

1 tablespoon chives, minced

3/4 cup buttermilk

Sausage, Egg, Cheese Filling

1 cup shredded cheddar cheese, divided

8 breakfast sausage patties, fully cooked

6 eggs, scrambled

How to make Sausage Egg and Cheese Stuffed Biscuits

To make the Biscuits:

Step 1: Prepare the oven. Preheat it to 350 degrees.

Step 2: Add the flour, baking powder, and salt in a food processor. Pulse various times until incorporated before adding in the butter, cheddar cheese, and chives. Pulse some more until the mixture compares to coarse crumbs.

Step 3: Gradually add the buttermilk into the flour mixture. Pulse several times until it forms a soft dough.

Step 4: On a lightly floured surface, knead the dough until no longer sticky. Roll to about half-inch thick and cut using a floured biscuit cutter.

Step 5: To make around 4-inches wide of dough, gently flatten and spread together 2 pieces of dough.

To prepare the Sausage, Egg, Cheese Filling:

Step 1: Layer a large pinch of cheese on the dough followed by 1 sausage patty, and around 2 tbsp of scrambled eggs. And top it all up with a piece of dough. Seal by pinching the sides. Transfer it to a parchment paper-lined baking sheet.

Step 2: Do the same with the rest of the ingredients to make 8 rolls.

Step 3: Place inside the preheated oven and bake for about 15 to 20 minutes or until golden brown.

Step 4: Remove from the oven and serve immediately or place in a fridge for up to a week.

Breakfast Biscuit Cups

by Rebecca October 14, 2020
written by Rebecca

Prep Time: 30 mins | Bake: 20 mins | Servings: 8

These bad boys are not only fun to make but they taste amazing! Biscuit cups stuffed with breakfast quintessential – a real treat to enjoy even on lunch and dinner.

Ingredients

1/3 pound bulk pork sausage

1 tablespoon all-purpose flour

1/8 teaspoon salt

1/2 teaspoon pepper, divided

3/4 cup plus 1 tablespoon 2% milk, divided

1/2 cup frozen cubed hash brown potatoes, thawed

1 tablespoon butter

2 large eggs

1/8 teaspoon garlic salt

1 can (16.3 ounces) large refrigerated flaky biscuits

1/2 cup shredded Colby-Monterey Jack cheese

How to make Breakfast Biscuit Cups

Step 1: Cook the sausage in a large skillet over medium heat or until no longer pink. Drain excess grease.

Step 2: Add in the flour followed by salt, and 1/4 tsp pepper. Stir until incorporated, slowly adding in 3/4 cup of milk. Bring to a boil and cook while stirring for about 2 minutes or until the mixture has thickened. Take the skillet out of the heat. Set aside.

Step 3: Cook the potatoes in butter in a separate large skillet over medium heat. Add in the eggs, garlic, salt, and the rest of the milk and pepper. Whisk and continue to cook until almost set.

Step 4: In the bottom of 8 ungreased muffin cups, press the biscuits individually on each cup up to the sides.

Step 5: Add the mixture on each cup followed by half of the cheese, and sausage. Sprinkle the tops with the rest of the cheese.

Step 6: Place inside the oven and bake for about 18 to 22 minutes at 375 degrees until golden brown.

Step 7: Remove from the oven and allow to cool for at least 5 minutes before taking the cups out of the pan.

Tips:

In a freezer container, freeze the cooled biscuit cups separating each layer with waxed paper.

To reheat, microwave for 50 to 60 seconds on high a frozen biscuit cup or until heated through.

In place of cubed hash browns, use shredded instead, and it’ll work perfectly.

For a savoury and addictive sweet treat, I highly recommend adding a touch of maple syrup or pour over the top of the sausage.

Easy French Toast Casserole

by Rebecca October 14, 2020
written by Rebecca

Prep Time: 10 mins | Cook Time: 55 mins | Total Time: 1 hr 5 mins | Servings: 12 servings

What’s not to love with this easy and instantaneous French Toast Casserole? Topped with a nutty sweet cinnamony crunch and drenched in creamy batter – seriously mouthwatering! My family’s go-to breakfast or brunch.

Ingredients

1 loaf 1 pound sourdough, brioche or challah, cut into 1-inch cubes

8 eggs slightly beaten

2 cups of milk

1 cup Greek yoghurt

2 tablespoons maple syrup

1 ½ teaspoons cinnamon

1 teaspoon vanilla extract

1/2 teaspoon salt

Topping:

1/2 cup chopped pecans

1/4 cup pure maple syrup

1/8 teaspoon ground cinnamon

How to make Easy French Toast Casserole

Step 1: Prepare the oven. Preheat it to 350 degrees F.

Step 2: Oil a 13 x 9-inch baking dish.

Step 3: In the prepared baking dish, add the bread cubes and set aside.

Step 4: Combine the eggs, milk, greek yoghurt, maple syrup, vanilla, and salt in a large bowl. Pour this evenly on top of the bread crumbs. Carefully coat the cubes with the batter using a spoon.

Step 5: Sprinkle chopped pecans over the french toast. Drizzle with maple syrup and cinnamon after.

Step 6: Place inside the preheated oven and bake for about 40 to 50 minutes or until a knife inserted in the middle of the casserole comes out clean. Grab a foil and loosely cover the casserole if the top begins browning too quickly in the last 10 minutes of baking so the casserole will not dry out.

Step 7: Remove from the oven and allow to cool for at least 5 minutes. If desired, serve with maple syrup. Enjoy!

Notes:

Leftovers stored in an airtight container will last in the fridge for up to 3 to 4 days.

Microwave individual slices when reheating or to warm the casserole through and crisp, pop in the oven for about 10 minutes at 350 degrees F.

Make the batter 24 hours ahead or prepare the full dish in advance, just use a very thick and crusty bread to hold up the entire thing even being soaked for hours.

Use any milk of your choice and omit or substitute the nuts with a different variety.

Ingredients

  • 1 lb sausage browned or 2 cups ham, diced
  • 6 green onions finely sliced
  • 2 cups shredded cheddar cheese
  • 8-10 8- inch flour tortillas
  • 6 eggs
  • 2 cups half-and-half or milk
  • 1 tbsp all-purpose flour
  • 1/2 tsp salt
  • 6 slices of bacon cooked crisp and crumbled

Instructions

Step 1: Add the meat, green onions, and a cup of cheese in a large bowl. Stir to combine.

Step 2: In the middle of each tortilla, add 1/3 cup of meat mixture. Carefully roll the tortilla up and transfer into a greased 9 x 13-inch baking dish, seam-side down. Do the same until every tortilla is filled.

Step 3: Beat the eggs with the half-and-half, flour, and salt in a large bowl. Pour this over the tortillas. Place in the fridge, covered, or bake instantly.

Step 4: When preparing to bake, sprinkle the tortillas with the rest of the cheese and bacon.

Step 5: Use a foil to cover the baking dish and place inside the oven to bake for about 35 minutes at 350 degrees. Take the foil out and continue baking for another 10 minutes or until the eggs are set, and cheese has melted.

PREP TIME: 20 MINUTES | COOK TIME: 30 MINUTES | TOTAL TIME: 50 MINUTES | SERVINGS: 12

Celebrate Southern with this classic Biscuit and Gravy Casserole. All the amazing flavours and texture in one pan that’s perfect for an easy and quick family brunch. With homemade gravy, more cheese, and sausage, this completes a quintessential breakfast. An all in one meal that is a breeze to make!

INGREDIENTS

1 (8-count) tube refrigerated biscuits, best not to use Grands because they puff up so much

1 pound breakfast sausage

2 tablespoons butter

1/4 cup all-purpose flour

2 1/2 cups milk divided

1/4 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon pepper

7 eggs

1 (8-ounce) block Colby Jack cheese shredded

HOW TO MAKE BISCUITS AND GRAVY CASSEROLE

Step 1: Prepare the oven. Preheat it to 350 degrees.

Step 2: Oil a 9 x 13-inch baking dish and set aside.

Step 3: Break the biscuits into 4 individual pieces. Across the bottom of the prepared baking dish, spread the pieces of biscuit.

Step 4: In a large pan, cook the sausage. Use a wooden spoon to crumb the sausage while it cooks. Take the crumb sausage out of the pan using a slotted spoon and transfer it on a paper towel-lined plate. If you’d like, leave around 1/4 cup of sausage in the pan for the gravy.

Step 5: Grease the pan with butter and heat over medium heat. Add the flour. Stir and cook for about 2 minutes.

Step 6: Slowly add in 2 cups of milk and whisk. Add in the garlic powder, salt, and pepper. Continue to simmer until the mixture is thick. Then, remove the pan from the heat.

Step 7: In a medium bowl, add and whisk the eggs and the rest of the 1/2 cup milk. To taste, season with a bit of salt and pepper.

Step 8: Over the biscuits sprinkle the sausage and half of the cheese. Then, pour over the egg mixture and gravy followed by the rest of the cheese.

Step 9: Place inside the preheated oven and bake for about 30 minutes.
