BAKED CHICKEN SCHNITZEL

Real crispy and juicy on the inside – baked chicken schnitzel is your new go-to healthy option for easy comfort food. Serve alongside a salad, mash, or in a bun like a sandwich. Either way, this is going to be perfect always!

Ingredients

1 tablespoon olive oil, or as desired

6 eaches chicken breasts, cut in half lengthwise (butterflied)

1 pinch salt and ground black pepper to taste

¾ cup all-purpose flour

1 tablespoon paprika

2 large eggs, beaten

2 cups seasoned bread crumbs

1 large lemon, zested

HOW TO MAKE BAKED CHICKEN SCHNITZEL

Step 1: Prepare the oven. Preheat it to 220 degrees C or 425 degrees F.

Step 2: Use aluminium foil to line a large baking sheet and drizzle over with an ample amount of olive oil. Then, place inside the preheating oven.

Step 3: On a clean plate, lightly press the chicken breasts to flatten to about 1/4-inch thickness. To taste, season with salt and pepper.

Step 4: Add the flour and paprika on a large pate and whisk until incorporated.

Step 5: Break the eggs in a medium shallow bowl, season with salt and pepper, and whisk until combined.

Step 6: Combine the bread crumbs and lemon zest on a different large plate.

Step 7: Coat the pieces of chicken in the flour mixture, then, soak in egg mixture, and dip in bread crumbs mixture.

Step 8: Into the prepared baking sheet, arrange the dipped and coated chicken breasts and drizzle with more olive oil.

Step 9: Bake in the preheated oven for about 5 to 6 minutes or until cooked through.

Step 10: Once done, take them out of the oven and serve. Enjoy!

Note:

You can use panko instead of seasoned bread crumbs.

CANNED PINEAPPLE PIE

A perfect pair with a cup of coffee for an early morning breakfast, dessert, or snack. Made with just a few simple pantry ingredients, this luxurious pie is heaven! Easy to whip up, with the right sweetness. Each bite is worth everything! I grew up with everything pie, and this canned Pineapple Pie is one of my favourite sweet treats. My mom makes the most delicious pies and I’m glad that she shared this with me.

Ingredients

1 recipe pastry for a 9-inch double-crust pie

¾ cup white sugar

3 tablespoons cornstarch

1 (20 ounces) can crush pineapple with juice

1 tablespoon lemon juice

2 tablespoons milk

1 tablespoon white sugar

HOW TO MAKE CANNED PINEAPPLE PIE

Step 1: Prepare the oven. Preheat it to 220 degrees C or 425 degrees F.

Step 2: Combine the cornstarch, sugar, lemon juice, and pineapple along with its juice in a medium mixing bowl until mixed.

Step 3: Heat a medium saucepan on the stove over medium heat.

Step 4: Into the saucepan, pour the mixture and let it boil for a minute or until it has thickened. Continuously stir to make a smooth texture.

Step 5: Take the saucepan out of the heat and let the mixture cool for a bit.

Step 6: In a pie pan lined with pastry, transfer the mixture. Cover with an inch wide strips, crisscrossing over the pie. Pinch to seal and brush the top with milk, then, sprinkle with sugar.

Step 7: Bake in the preheated oven for approximately 35 minutes or until cooked through.

Step 8: Once done, remove from the oven and allow to cool at room temperature.

French Onion Smothered Pork Chops

Tender, juicy pork chops smothered in thick, super flavorful French Onion sauce with gravy and mushrooms. This freaking delicious pan-fried or oven-baked dish is perfect either way. While hot, top the chops with cheese and let it melt for that extra decadence.

Ingredients

Pork Chops

4 pork chops centre-cut, bone-in

Salt/Pepper, to taste

2 Tablespoons flour

2 Tablespoons olive oil

4 slices gruyere or swiss cheese, optional

French Onion Sauce

6 Tablespoons Butter, Separated

2 large yellow onions, sliced 1/4 inch thick

1 Tablespoon flour

8 oz. button mushrooms, sliced

2 cloves garlic minced

1/3 cup dry white wine

1 ¼ cup chicken broth

1 sprig fresh thyme

How to make French Onion Smothered Pork Chops

To prepare the Pork Chops:

Step 1: Prepare the oven. Preheat it to 400 degrees.

Step 2: Season each side of the pork chops with salt and pepper and pat with flour.

Step 3: In a large cast-iron skillet, heat 2 tbsp olive oil over medium-high heat.

Step 4: Once hot, add the pork chops and sear for about 3 to 4 minutes on both sides.

Step 5: Transfer on a baking sheet and place inside the preheated oven. Bake for about 10 to 15 minutes or until the internal temperature of the chops reached 145 degrees.

To make the French Onion Sauce:

Step 1: Melt 4 tbsp butter in the same skillet over medium-low heat.

Step 2: Saute the onions to coat them in butter and continue to cook for about 35 to 40 minutes. As the onions cook, stir them occasionally using a silicone spatula.

Step 3: Add in the rest of the butter and the mushrooms. Cook for 5 minutes more or until the mushrooms soften and the size decreased.

Step 4: Stir in the garlic and cook for a minute more.

Step 5: Add in a tbsp of flour and toss the onions and mushrooms. Continue to cook and stir for another 1 to 2 minutes.

Step 6: Adjust the heat to medium-high before pouring in the whine. Heat for 5 minutes more and scrape up any bits on the bottom of the pan with a silicone spatula so the flavours can work its way into the sauce.

Step 7: Before adjusting the heat to medium-low, add the chicken broth and fresh thyme first. Simmer the sauce for about 15 minutes until thickened.

Step 8: This is optional but if desired, top each pork chops with cheese and broil until hot and melted. Or just cover the skillet and let the cheese melt.

Step 9: Before serving, place the chops back into the skillet and smother with the sauce. Enjoy!

Notes:

In place of wine, use chicken or beef broth instead.

If you will use thinner cuts of meat, that can be cook right in the skillet with the chicken broth.

INGREDIENTS

2 pounds carrots cut into 3-inch pieces

1/2 cup butter

2 tbsp honey

4 garlic cloves minced

1/2 tsp salt

1/4 tsp fresh ground pepper

Fresh parsley

HOW TO MAKE HONEY GARLIC ROASTED CARROTS

Step 1: Prepare the oven. Preheat it to 425 degrees.

Step 2: Melt the butter in an oven-safe skillet. Stir in the honey and garlic until combined.

Step 3: Toss in the carrots to coat.

Step 4: Place inside the preheated oven and bake for about 25 minutes or until the carrots are tender when pierce with a fork.

Step 5: To slightly caramelized the carrots, boil for about 3 to 4 minutes (optional).

Step 6: Remove from oven and sprinkle with some chopped parsley.

SMOTHERED GREEN BEANS

A super easy to make green beans smothered in brown sugar, butter, soy sauce, and garlic topped with crispy bacon. Excellent for potlucks and get together. Everyone loves this and always go back for a second take. So deliciously addicting, everybody went nuts on the first bite. I made plenty and have some leftovers. Ate them the next day and it still great!

This is a hit always! Never failed to impress my guests, they asked me for the recipe every time. Super simple, not fussy, and quick to prepare. Excellent addition to your weekly menu rotation. I promise these smothered green beans is worth everything! A must-have and to keep. Cook the bacon ahead and this dish is on your dinner table in no time! Try this tonight and I am one hundred per cent sure that your whole family will ask for this over and over again.

Ingredients

5 (15-oz) cans green beans, drained

1 lb bacon

⅔ cup brown sugar

¼ cup of butter melted

¼ cup low-sodium soy sauce

1½ tsp garlic powder

HOW TO MAKE SMOTHERED GREEN BEANS

Step 1: Prepare the oven. Preheat it to 350 degrees F.

Step 2: In an ungreased 9 x 13-inch pan, pour the drained green beans.

Step 3: Cook the bacon in a large skillet until nearly done but not too crispy. Once cooked, transfer on paper towels to drain before chopping.

Step 4: Sprinkle the pieces of bacon over the green beans.

I always have a basket of hot fluffy biscuits and a skillet full of thick sausage gravy. I grew up with my grandmother and that is almost like a tradition. We celebrate deep-south always, every day. And nothing is more Southern than biscuits and gravy. Homemade biscuits with this easy creamiest sausage gravy are all that your family deserved. Sausage gravy is the richest topping, side dish, and full of protein. And it is super easy to whip up with just a few simple readily available ingredients.

Ingredients

1 pound bulk pork sausage (ground breakfast sausage)

1/3 cup all-purpose flour

3 ½ cups whole milk

1 teaspoon dried thyme

½ teaspoon salt

½ teaspoon ground black pepper

¼ teaspoon garlic powder

How to make Easy Sausage Gravy

Step 1: Cook the sausage in a large saute pan. Use a wooden spoon to break them into pieces. Continue to cook, stirring and breaking into smaller pieces until the sausage is brown.

Step 2: Add in the flour into the cooked sausage followed by thyme, salt, pepper, and garlic powder. Mix well to coat the sausage entirely and absorb the grease. Stir some more and continue cooking for 2 minutes more.

Step 3: Add in 3 cups of milk and stir. Simmer until thick and smooth. Then, turn the heat off. You can pour in an extra half cup of milk if the gravy becomes too thick.

How to make Jalapeño Cornbread Poppers

Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.

Step 2: Line with parchment paper a large baking dish.

Step 3: Slice the jalapeños into two. Cut lengthwise and remove the seeds.

Step 4: Place them on the lined baking sheet.

Step 5: Place the bacon in a skillet. Place on the stove and turn the heat to medium.

Creamy cheesy potatoes topped with crispy buttered corn flakes cereal. An out of this world potato casserole that is always a huge hit on potlucks, gatherings, and parties!

Ingredients

3 cups frozen cubed potatoes -thawed at room temperature for at least 30 minutes

1 (15 oz.) can condense cream of chicken soup

1 cup sour cream

1 cup shredded cheddar cheese

1 teaspoon salt

1/2 teaspoon garlic powder

For the Corn Flake Topping:

2 cups corn flakes cereal

1/4 cup butter -melted

The breakfast of my dreams! Sweet and creamy Cream Brulee French Toast – better tasting, richer, and decadent than any French toast you ever had! Impress everyone, this changes the game 360 degrees. With just a few pantry ingredients bring these to the table in under 30 minutes. Don’t be surprised because this is not your typical French toast, it might be easy and quick like the usual but these fluffy thick slices of challah bread dressed in a perfectly sweet and creamy mixture are the most heavenly breakfast/dessert you will ever make!

INGREDIENTS

5 eggs

1 c. milk

1/2 c. heavy cream

1 tsp. vanilla

1/4 tsp. ground nutmeg

1 tsp. cinnamon

Pinch kosher salt

1 stick melted butter

3/4 c. brown sugar

1/4 c. maple syrup

1 loaf challah bread, sliced 1” thick

Confectioners’ sugar, for serving (optional)

How to make Creme Brulee French Toast

Step 1: Prepare the oven. Preheat it to 190 degrees C or 375 degrees F.

Step 2: In a small mixing bowl, add the brown sugar, maple syrup, and melted butter. Whisk until well mixed.

Step 3: Transfer the mixture into a large tall baking dish. Spread the mixture evenly on the bottom.

Step 4: Place the bread on top and arrange them in a single layer.

Step 5: In a large mixing bowl, add the milk, eggs, vanilla, cinnamon, nutmeg, cream, and salt. Whisk until well mixed.

Step 6: Transfer the mixture on top of the bread.

Step 7: Cover the baking dish and place it inside the fridge to chill for at least 1 hour to overnight.

Step 8: Place inside the preheated oven and bake for 25 minutes or until the bubbly.

2 cups (8-ounces) shredded medium cheddar cheese

12 large eggs

1/2 cup whole milk

1 1/2 teaspoons kosher salt

1 teaspoon fresh ground black pepper
