Apple Filling:
⅓ c. brown sugar
⅓ c. sugar
9 apples, peel, core, and slice (I used Granny Smith)
2 teaspoons corn starch
2 teaspoons lemon juice
1 c. pecans, chopped
1 teaspoon cinnamon
¼ teaspoon nutmeg
Caramel Sauce:
1 c. light brown sugar
¾ c. butter (1½ sticks)
1 teaspoon vanilla
¼ c. milk
Topping:
2 stick butter, cut into small pieces
3 c. all-purpose flour
2/3 c. sugar
2/3 c. brown sugar
3 teaspoons baking powder
2/3 c. boiling water
1 teaspoon salt
Additional topping:
1 teaspoon cinnamon
3 tablespoons sugar
How to make Caramel Apple Pecan Cobbler
Step 1: Prepare the oven. Preheat it to 375 degrees.
Step 2: To make the filling: In a large mixing bowl, add the sliced apples. Sprinkle them with brown sugar, sugar, cinnamon, corn starch, lemon juice, and nutmeg. Toss well until the apples are completely coated. Stir in the pecans.
Step 3: For the Caramel Sauce: Melt the butter in a small heavy bottom pan over low heat. Once the butter has melted, add the brown sugar and milk. Stir well and bring to a boil. Keep stirring for about 12 minutes. Take off the heat when done, then stir in a tsp of vanilla. Allow the caramel to cool for at least 10 minutes. Pour this over the apple mixture, saving a little to drizzle on top. Stir well.
Step 4: To make the topping: Place the flour, sugar, brown sugar, baking powder, and salt in a medium mixing bowl. Mix well until combined. Mix the butter into the flour mixture using a pastry blender until crumbly. Now, add the boiling water and stir until well incorporated. Over the apples, spoon the mixture and spread it to coat the apples. Mix the sugar and cinnamon in a small bowl, then sprinkle this over the apples.
Step 5: Place the cobbler in the preheated oven and bake for about 35 minutes or until the topping is golden brown.
