Ingredients

2 boneless, skinless chicken breasts

olive oil

salt, to taste

pepper, to taste

8 oz mozzarella cheese(225 g), 1 package

1 cup tomato(200 g), diced

1 tomato, sliced

15 leaves fresh basil

BALSAMIC REDUCTION:

1 cup balsamic vinegar(240 mL)

¼ cup honey(85 g)

How to make Caprese Chicken Rollups

Step 1: Prepare the oven. Preheat it to 400 degrees F or 200 degrees C.

Step 2: Heat the balsamic vinegar with honey in a saucepan over high heat. Keep stirring until the sauce decreases to about 1/3 cup or 80 ml. And set aside.

Step 3: Slice the chicken breasts on a cutting board horizontally in half.

Step 4: Use a piece of plastic wrap to cover the chicken. And pound with the rough side of a metal mallet until half-inch or 1cm thick. Do the same for the rest of the breasts.

Step 5: Over pieces of chicken breasts, drizzle olive oil, and season with salt and pepper.

Step 6: On each chicken piece, add 2 slices of mozzarella, 1/4 cup or 50g diced tomatoes, and 3 pieces of basil in order.

Step 7: Roll the chicken up and ensure to tucked under the ingredients and not pushed them out the sides as much as you can.

Step 8: Transfer the roll-ups in a greased baking dish, drizzle with extra olive oil, and sprinkle with salt and pepper.

Step 9: Place inside the preheated oven and bake for about 15 to 20 minutes or until the inside temperature of the chicken reaches 160 degrees F or 71 degrees C.

Step 10: Remove from the oven and add a slice of mozzarella on each roll-up. Then, broil for about 5 to 10 minutes or until the mozzarella has melted.

Step 11: Allow the chicken to rest for at least 10 minutes.

Step 12: Before serving, add on each roll-up 1 basil leaf, a slice of tomato, and drizzle with balsamic reduction.
