Ingredients

1 tablespoon Olive Oil

½ c. Sliced Red Onion

1 c. Sliced Red Bell Pepper

1 c. Sliced Yellow Bell Pepper

1 teaspoon Minced Garlic

Salt and pepper to taste

2 teaspoons Cajun Seasoning or more to taste

1 pound Smoked Cooked Chicken Sausage such as andouille

½ pound Shrimp peeled and deveined

¼ c. Chicken Broth

2 teaspoons Lemon Juice

1 tablespoon Chopped Parsley

How to make Cajun Shrimp Sausage Skillet

Step 1: In a large pan, heat the olive oil over medium-high heat. Once the oil is hot, add the onion and bell peppers to the pan. Cook for approximately 4 to 5 minutes until tender. Add the garlic and continue to cook for 30 seconds more.

Step 2: To taste, season the vegetables, then take them off the pan and keep warm.

Step 3: To the now-empty pan, add the shrimp and sausage. Sprinkle with the Cajun seasoning and salt and pepper and cook for about 3 to 4 minutes until the shrimp is pink and opaque and the sausage is heated through. Then, return the vegetables to the pan.

Step 4: Add the chicken broth to the pan along with the lemon juice. Stir and let the mixture simmer for about 2 to 3 minutes. Before serving, garnish with parsley. Enjoy!
