1 tablespoon Olive Oil
½ c. Sliced Red Onion
1 c. Sliced Red Bell Pepper
1 c. Sliced Yellow Bell Pepper
1 teaspoon Minced Garlic
Salt and pepper to taste
2 teaspoons Cajun Seasoning or more to taste
1 pound Smoked Cooked Chicken Sausage such as andouille
½ pound Shrimp peeled and deveined
¼ c. Chicken Broth
2 teaspoons Lemon Juice
1 tablespoon Chopped Parsley
How to make Cajun Shrimp Sausage Skillet
Step 1: In a large pan, heat the olive oil over medium-high heat.
Step 2: Once the oil is hot, add the onion and bell peppers. Cook for about 4 to 5 minutes until tender. Add in the garlic and cook for another 30 seconds.
Step 3: To taste, season the vegetables, then take away from the heat, keeping them warm.
Step 4: Into the same pan, add the shrimp and sausage, then sprinkle with Cajun seasoning and season with salt and pepper.
Step 5: Cook the shrimp for about 3 to 4 minutes until no longer pink and the sausage is heated through. Put the vegetables back to the pan. Pour in the chicken broth followed by the lemon juice. Stir and allow to simmer for 2 to 3 minutes.
Step 6: Garnish with parsley. Serve and enjoy!
