Whenever I pick a meal for my family, I consider many things. And this recipe hits every spot! Incredibly easy and quick to throw together packed with amazing Cajun flavour. Plus, it is healthy and crazy delicious, and amazing for meal prep. To make this, all you need are a few simple ingredients, and in less than twenty minutes, you’ll have this on your dinner table.
I work six times a week, and sadly I do not have enough time to cook decent meals most of the time. I hate resorting to takeouts so, during my free time, I checked the net for easy, quick, and healthy recipes. I have a stash of my favourite recipes, and this Cajun Shrimp and Sausage Vegetable Sheet Pan are in my top five! My family loves this so much, and I admire how I can easily make this even on the busiest days. I simply throw my fresh veggies onto a sheet pan with shrimp and sausage and toss them in Cajun seasoning. Pop this in the oven, and it is ready in minutes!

Ingredients
1 lb large shrimp peeled and deveined
14 oz. pork or chicken sausage sliced
2 medium-sized zucchini sliced
2 medium-sized yellow squash sliced
½ bunch asparagus sliced into thirds
2 red bell pepper chopped into chunks
Salt and Pepper
2 tbsp olive oil
2 tbsp Cajun Seasoning
HOW TO MAKE CAJUN SHRIMP AND SAUSAGE VEGETABLE SHEET PAN
Step 1: Prepare the oven. Preheat it to 400 degrees.
Step 2: Place the shrimp, sausage, zucchini, yellow squash, asparagus, bell pepper, and salt and pepper in a large bowl. Drizzle with olive oil and sprinkle with Cajun seasoning. Toss everything until coated.
Step 3: Onto a sheet pan, evenly spread the content of the bowl. Place in the preheated oven and bake for about 15 to 20 minutes until the shrimp is pink and the vegetables are tender.
