INGREDIENTS
2-3 salmon fillets skin on (about 1 pound)
1 tablespoon olive oil
3 tablespoons butter divided
3 garlic cloves minced
1/2 c white wine (your favourite kind)
2 tablespoons chopped parsley
2 tablespoons lemon juice
1 tablespoon Cajun seasoning or to taste
Salt & pepper to taste
HOW TO MAKE CAJUN SALMON
Step 1: With salt, pepper, and Cajun seasoning, season the entire salmon fillets.
Step 2: In a non-stick skillet, heat oil over medium heat. Once the oil is glistening, add the salmon fillets flesh-side down. Cook for about 5 minutes on both sides or to your liking. Transfer the cooked salmon fillets on a plate and set aside.
Step 3: Add a tbsp of butter into the same pan. Saute the garlic for a minute.
Step 4: Pour in the wine and cook for another 5 minutes until the liquid is reduced by more than half.
Step 5: Add in the rest of the butter, parsley, lemon juice, and a bit of Cajun seasoning. Stir well until incorporated. Bring the mixture to a moderate simmer.
Step 6: Add the salmon back to the pan. Cook further for 2 to 3 minutes more.
