Cajun Chicken with Bell Peppers

Prep Time: 15 mins | Cook Time: 30 mins | Total Time: 45 mins | Servings: 4 people

A delicious one-pan meal with moist and juicy chicken breasts seasoned with homemade Cajun spice with loads of paprika. Easy and quick to throw together, making this perfect for busy days. A bonus, this Cajun Chicken with Bell Peppers is low-carb and gluten-free!

Ingredients

Cajun Seasoning:

1 tsp paprika

1/4 tsp cayenne pepper

1/4 tsp oregano

1/4 tsp thyme

1/4 tsp salt

Chicken:

2 bell peppers, small, thinly sliced (or use mini sweet peppers)

4 chicken breasts, small

4 cloves garlic, minced

6 ounces cream cheese, cold, refrigerated, and sliced into 8 slices

1/2 c. cheddar cheese, shredded

How to make Cajun Chicken with Bell Peppers

Cajun chicken seasoning:

Step 1: In a small bowl, combine the Cajun seasoning ingredients (paprika, cayenne pepper, oregano, thyme, and salt).

Cajun chicken:

Step 1: Prepare the oven. Preheat it to 375 degrees F.

Step 2: On the bottom of a casserole dish, place the thinly sliced bell peppers.

Step 3: On top of the bell peppers, place the chicken breasts.

Step 4: Sprinkle the chicken breasts generously with Cajun seasoning and top with minced garlic.

Step 5: With 2 slices of cream cheese, top each chicken breast and sprinkle with shredded cheddar cheese.

Step 6: Place inside the preheated oven and bake for about 20 to 30 minutes, uncovered until the chicken is cooked through.

Step 7: If desired, broil the chicken for about 2 minutes.

Step 8: To serve, evenly place the bell peppers around and on top of the chicken. Enjoy!

Notes:

Adjust the cooking time depending on the thickness of the chicken breasts.

For any leftovers, place them in an airtight container and store them in the fridge for up to 3 days.
