I am obsessed with Cajun seasoning! I’ve read that this is the top five go-to’s of most chefs for good reasons. If you search the web, you’ll see a lot of Cajun recipes, and one of my favourites is this Cajun Chicken. It’s not only a breeze to make but crazy delicious! All you need to throw this together are a few simple ingredients, and this is ready in less than an hour. If you want to spice up your weeknight dinner, then you have to try this Cajun chicken! Juicy and flavorful chicken stuffed with peppers and cheese. A must-try and absolutely a keeper! Leftovers are also amazing as the flavour lasts and gets better. 4 boneless, skinless chicken breasts
2 tablespoons extra-virgin olive oil
1 cup red and green bell pepper, diced
1 cup medium onion, diced
Freshly ground black pepper
2 tablespoons Cajun seasoning
1 cup shredded cheddar
Kosher salt
How to make Cajun Chicken
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: Heat the oil in a large ovenproof skillet over medium heat. Once the oil is hot, add the onions and peppers to the skillet and cook for about 5 minutes or until tender. Sprinkle with salt and pepper, then take the skillet off the heat. Allow the onions and peppers to cool for a little.
Step 3: Make a pocket in each chicken breast using a sharp paring knife. Fill each pocket with the vegetable mixture, then top with cheddar. Season the entire chicken with Cajun seasoning, salt, and pepper.
Step 4: Place the chicken in the same skillet. Pop in the preheated oven and bake the stuffed chicken for approximately 25 minutes or until completely cooked.
