My family is not too much into cabbages, but not until this easy Cabbage Roll Casserole recipe. I am not surprised that my family loves every bite because this casserole is without a doubt a winner! Super delicious and comes together with less time and effort.

2 tbsp olive oil
1 pound lean ground beef
1 medium head green cabbage chopped
1 c. long-grain white rice (uncooked)
3 cloves garlic minced
1 medium onion chopped
2 tbsp brown sugar
1 (14.5 oz.) can low sodium beef broth
1 (15 oz.) can tomato sauce
1/2 tsp paprika
1/2 tsp onion powder
1/4 tsp ground cayenne pepper
1 1/2 c. finely shredded Monterey Jack Cheese
1 1/2 c. finely shredded sharp cheddar
HOW TO MAKE CABBAGE ROLL CASSEROLE
Step 1: Prepare the oven. Preheat it to 350 degrees. Using nonstick cooking spray or olive oil spray, grease a 9 x 13-inch casserole dish.
Step 2: Cook the ground beef. Add the onion once the ground beef is almost halfway browned and continue to cook until the meat is completely browned. Adjust the heat to low. Stir in the garlic and cook for another minute. When done, drain the excess grease.
Step 3: To the ground beef and onion, add the paprika, onion powder, cayenne, brown sugar, tomato sauce, beef broth, and rice. Bring everything to a low boil, then adjust the heat to a simmer. Put the lid on and simmer for about 20 minutes or until the rice is tender.
Step 4: In a large skillet, heat a tbsp olive oil over medium heat. Add half of the chopped cabbage to the hot oil and cook for about 5 to 7 minutes or until slightly soft. On the bottom of the prepared casserole dish, spread the cabbage, then top with half of the ground beef mixture and sprinkle with half of the cheeses.
Step 5: In a large skillet, heat a tbsp olive oil over medium heat. Top with half of the chopped cabbage and continue to cook for additional 5 to 7 minutes or until a little tender.
Step 6: On top of the cheese in the casserole dish, spread the cabbage. Sprinkle with rest the half of the beef mixture and the remaining cheese.
Step 7: Using aluminium foil, tent the casserole. Place it in the preheated oven and bake for about 20 minutes. Remove the foil and continue baking for additional 20 minutes or until the cheese turned lightly browned.
