I never buy popcorn again after I made this Butter Toffee Popcorn. This is pretty easy to make. I use plain microwavable popcorn for this as it is easier for me. And the toffee sauce is just amazing!

4– 3 ounces bags of microwave popcorn (lightly salted)
2 sticks butter
2 1/4 c light brown sugar
3/4 c dark corn syrup
1/2 tsp salt
2 tsp pure vanilla extract
1 tsp baking soda
2–3 c roasted, salted peanuts
HOW TO MAKE BUTTER TOFFEE POPCORN
Step 1: Prepare the oven. Preheat it to 250 degrees.
Step 2: Grease a large rimmed baking sheet with butter. Set aside.
Step 3: In the microwave, pop the popcorn. Once done, remove as many unpopped kernels. In a large bowl, transfer the popped popcorn with the peanuts. Set aside.
Step 4: In a large saucepan, melt 2 sticks of butter over medium heat. Once melted, add in the brown sugar, corn syrup, and salt, stirring constantly until it starts boiling slightly. Let the mixture boil for about 3 minutes, stirring regularly until the bubbles are fully dissolved.
Step 5: Over the popcorn and peanuts, pour the toffee mixture. Mix carefully with a rubber spatula until the popcorn and peanuts have been completely covered.
Step 6: Into the prepared baking sheet, transfer the popcorn. Evenly spread, then place in the prepared oven. Bake for about an hour.
Step 7: When done, remove from the oven and let the popcorn cool for at least 25 minutes before breaking them apart.
Step 8: Place in an airtight container or enjoy immediately.
NOTE:
Prepare the popcorn using a hot popcorn popper. Pop about 3/4 cup of uncooked popcorn kernels.
