Buffalo Chicken Party Platter

Meatballs are a staple at home. I make sure to find ways to serve meatballs in different ways. I enjoy trying out new recipes now and then. It is therapeutic for me to search recipes online and that’s where I found this fun recipe. Buffalo chicken meatballs bites and potatoes covered in buffalo sauce, cheese, and ranch. It is one heck of a party platter that’s perfect for game days or any day!

This recipe is pretty easy and quick to throw together. Ready in under thirty minutes, this sure is one of the hottest take-ups on a hot dish!

Ingredients

6 chicken breasts, finely minced

1 red onion

1/3 c. breadcrumbs

Salt & pepper

10 pieces of potato

1/2 c. butter

1 bottle Frank’s Red Hot Sauce

Parsley

Ranch dressing, for garnish

Chopped celery, for garnish

Scallions, for garnish

How to make Buffalo Chicken Party Platter

Step 1: Boil the potatoes. Allow them to cool before cutting into even-sized rounds.

Step 2: In a pie dish, arrange the potatoes, making sure to cover both sides and bottom of the dish.

Step 3: In a bowl, add the minced chicken or pre-ground chicken, diced onion, bread crumbs, parsley, salt, and pepper. Mix well and set aside.

Step 4: Melt half a cup of butter in a pan. Add the Frank’s Red Hot Sauce. Pour half of the sauce into the ground chicken mixture, mix well, then form into meatballs.

Step 5: Add a piece of meatball on top of each potato. Between each meatball, slide the potato slices. Pour on top of the rest of the buffalo sauce and cover with cheddar cheese.

Step 6: Place in 350 degrees preheated oven and bake for about 20 minutes or until the meatballs are cooked through.

Step 7: Remove from the oven and top with ranch dressing, celery, and scallions.

Step 8: Serve and enjoy!
