Buffalo Cheeseburger Tater Tot Casserole

This quick and simple recipe is one of the best I’ve made this week! A pot dish with ground beef, buffalo sauce, and cheddar cheese. My kids are crazy over this casserole. Whenever I make this, it’s guaranteed a no leftover night!

You will be surprised if I tell you that this tater tot casserole is gluten-free! I know, I was blown, too! Plus, I love the fact that I can make this ahead of time. All you need is to assemble this casserole and store it in the fridge until ready to bake. Before baking, stir in the cheese and top with tater tots. Pop in the oven and bake as directed, and you are good to go!

Ingredients

1 tablespoon olive oil

½ c. onions, diced

3 garlic cloves, minced

1 pound ground beef

10 ounces can diced tomatoes with green chillies

¾ c. buffalo sauce

2 tablespoons chilli powder

2 c. cheddar cheese, shredded – divided

28 ounces bag frozen tater tots

How to make Buffalo Cheeseburger Tater Tot Casserole

Step 1: Prepare the oven. Preheat it to 375 degrees F.

Step 2: To a large oven-safe skillet, add the olive oil over medium heat. Once the oil is hot, add the onion to the skillet along with the garlic and ground beef. Cook for about 8 to 10 minutes until the ground beef is cooked through. When done, drain the excess grease from the skillet.

Step 3: To the ground beef mixture, add the diced tomatoes, green chillies, buffalo sauce, chilli powder, and a cup of cheese. Stir well to combine.

Step 4: Then, in an even layer, arrange the tater tots on top.

Step 5: Put in the preheated oven and bake for about 30 minutes, uncovered. When done, take the casserole out of the oven and sprinkle the rest of the shredded cheddar cheese on top.

Step 6: Return to the oven and resume baking for another 10 minutes.

Step 7: Serve immediately. Enjoy!
