I love throwing simple parties during summer. It started when I moved to this very beautiful neighbourhood with a big enough yard. I have a small garden where I planted my fave flowers, and on the other side, I planted tomatoes, zucchini, lettuce, etc. So whenever I need fresh produce, I just pick them from the humble garden.

This Bruschetta recipe has been my go-to appetizer. It’s pretty easy and quick to make. I like to serve this Bruschetta cold. Most of the time, I served it on bread that’s already cooled down. You can pair this with so many things! My favourite is thin slices of salami, but you can also enjoy this with other smoked meats.
INGREDIENTS
8 Roma tomatoes seeded and diced
1/3 c. chopped fresh basil
1/4 c. shredded Parmesan cheese
2 cloves garlic minced
1 tbsp balsamic vinegar
1 tsp olive oil
1/4 tsp kosher salt
1/4 tsp freshly ground black pepper
1 loaf French bread toasted and sliced
How to make Bruschetta
Step 1: Combine the tomatoes, basil, Parmesan cheese, and garlic in a bowl. Stir in the balsamic vinegar along with olive oil, kosher salt, and pepper. Place in the fridge while preparing the bread.
Step 2: To medium, heat the gas grill or charcoal grill until the coals are ash white. Alternately, you can use the grill pan on the stovetop.
Step 3: Using olive oil, brush the slices of bread as desired. Then, place the slices on the grill until browned and the grill marks are visible. Flip the bread slices and do the same.
Step 4: Take the bread pieces off the grill when done, then top each slice with the bruschetta topping. Enjoy!
