This is one of the best meals you can serve to your family for a Sunday dinner or a holiday meal. The pork loin is glazed with brown sugar Dijon mustard baked with carrots, apples, and sweet potatoes. Always a hit and never fail to impress everyone around the table!
Ingredients
Meat:
3 pounds pork loin
Vegetables:
2 tbsp olive oil
2 granny smith apples (optional) peeled, cored, and sliced thickly
1 pound carrots cut in strips
⅓ c. dark brown sugar (such as Wholesome Dark Brown Sugar)
2 sweet potatoes peeled and sliced lengthwise
Spices:
1 tsp Italian seasoning (optional)
1 tsp sea salt
½ tsp black pepper
Glaze:
½ c. brown sugar
3 tbsp Dijon mustard (creamy and thick, such as Maille Dijon Mustard)
Garnish:
1 tbsp parsley (chopped, for decoration)
How to make Brown Sugar Dijon Glazed Pork Loin with Carrots, Apples, and Sweet Potatoes
Step 1: Slice the carrots and sweet potatoes lengthwise. Place the pieces in a bowl and toss with 2 tbsp olive oil.
Step 2: After peeling the apples, place them in another bowl. Set aside.
Step 3: In the middle of the baking sheet, put the pork loin with the fat layer on top. Around the pork loin, scatter the oiled carrots and sweet potatoes. Evenly season the pork loin with 1 tsp sea salt, half tsp black pepper, and 1 tsp Italian seasoning (optional).
Step 4: With Dijon mustard, generously brush pork loin. I used about 3 tbsp of mustard. If using smaller pork loin, use less mustard.
Step 5: Into the mustard, press half a cup of dark brown sugar.
Step 6: Bake the pork loin, carrots, and sweet potatoes for about 30 minutes at 375 degrees F. Remove from the oven and add the apples, then sprinkle with 1/3 cup of brown sugar.
Step 7: Place the baking sheet in the oven again and continue baking for approximately 20 to 30 minutes until the internal temperature of the pork loin reached between 145 degrees (pink roast) to 1555 degrees F (white roast).
Step 8: Take the baking sheet from the oven and allow the roast to rest for about 10 minutes before slicing. Enjoy!
