Broccoli Stuffed Chicken Breasts

I am sure you’ll go crazy over this flavour-packed meal that’s bursting with amazing flavour and texture. A delicious, quick low-carb dinner that’s perfect for the entire family and during busy days. Juicy and tender chicken stuffed with steamed broccoli, garlic, bell pepper, Parmesan, cheddar, and cream cheese – a wonderful combination of mixture that makes this dish beyond scrumptious!

Ingredients

Chicken:

4 chicken breasts

1 tsp Italian seasoning optional

1 tsp paprika optional

1/2 tsp

1 tsp salt

1/2 tsp black pepper

1 tbsp olive oil

Filling:

2 c. broccoli florets

1/4 c. bell pepper minced

1/2 c. cheddar cheese or melting cheese of choice

4 oz. cream cheese softened

¼ c. grated Parmesan

2 cloves garlic minced

salt and pepper

How to make Broccoli Stuffed Chicken Breasts

Step 1: Into small chunks, chop the broccoli florets. In a microwave-safe bowl, place the florets with about 2 tbsp water. Using plastic wrap, cover the bowl, pop in the microwave, and heat for about 2 to 3 minutes on high. Or you can blanch the broccoli in boiling water on the stove-top for about a minute.

Step 2: Slice horizontally each chicken breasts using a sharp knife to make a pocket, making sure to leave about half an inch of space from the ends and sides. With a generous amount of Italian seasoning, garlic powder, paprika, salt, and pepper, season the chicken breasts.

Step 3: Combine the steamed and chopped broccoli, bell pepper, garlic, cheeses, and salt & pepper in a large bowl. Into each chicken breast, evenly spoon the mixture. If needed, secure with toothpicks.

Step 4: Prepare the oven. Preheat it to 400 degrees F.

Step 5: In a large cast-iron or oven-safe pan, heat a tbsp oil over medium-high heat. Once the oil is hot, add the chicken breasts to the pan and cook each side for about 2 to 3 minutes until golden.

Step 6: With aluminium foil, cover the dish, transfer to the preheated oven, and then bake until cooked through. This takes about 15 to 20 minutes.
