This healthy casserole with protein-packed quinoa and fresh broccoli florets with homemade sauce topped with melted cheese is an amazing weeknight dinner perfect for everyone! It’s an easy and quick recipe for keeps.

2 tbsp butter
2 c. water or low sodium broth, for cooking quinoa
1 c. uncooked quinoa, I love Ancient Harvest
4 c. fresh broccoli florets
1 1/2 c. chopped yellow onion
6 cloves garlic, minced
1 c. milk, I used unsweetened almond milk
2 tbsp oat flour, all-purpose will work too
8-ounce block of good quality cheddar cheese, divided
1/2 tsp garlic powder
1 tsp sea salt
1 tsp ground pepper
How to make Cheesy Broccoli Quinoa Casserole
Step 1: Using a nonstick spray, lightly grease a casserole dish. For this recipe, I use an 8 x 8-inch square dish.
Step 2: Following the package directions, ready the quinoa using water or broth to make around 3 cups of cooked, fluffy quinoa. Then, transfer to a large mixing bowl.
Step 3: In the meantime, steam the broccoli for about 5 to 6 minutes or until crisp-tender and bright green.
Step 4: Using a food processor with the shredding attachment, shred the cheese. Or use a handheld grater.
Step 5: Prepare the oven. Preheat it to 350 degrees F.
Step 6: In a medium saucepan, melt the butter over medium heat. Then, add the onion and garlic. Cook for about 7 minutes or until tender and aromatic. Whisk the milk, flour, garlic powder, salt, and pepper in a small bowl or measuring cup. Into the saucepan with the onions and garlic, pour the milk mixture. Let the sauce simmer for about 5 minutes, stirring constantly until the sauce has thickened. Take the pan off the heat and quickly stir in 2 c shredded cheddar cheese until melted.
Step 7: Over the quinoa and broccoli, pour the cheese sauce. Toss well. Into the prepared baking dish, transfer the mixture, and top with the rest of the shredded cheese. Place in the preheated oven and bake for about 15 minutes or until the casserole is heated through and the cheese has melted.
Step 8: Remove from the oven when done and serve the casserole warm. Enjoy!
