I love a simple side dish that I can throw together easily and pair with any meal. This broccoli cheese casserole hits all the perfect sweet. It is not only easy to make, but it uses only a few readily available ingredients, it is ready in a breeze, and I can serve this with just about anything. No wonder why my whole family is obsessed with this delicious, crowd-pleaser side dish!

Ingredients
2 large eggs, slightly beaten
1/4 c. of butter melted (1/2 stick)
4 c. chopped broccoli
1 (10 oz.) can of cream of chicken soup
1/2 medium onion finely chopped
1 c. mayonnaise or miracle whip (we prefer mayo) Could also substitute Greek yoghurt or sour cream
1 1/2 c. extra sharp cheddar cheese
1/2 sleeve of Ritz crackers, crushed
1/2 tsp salt
1/4 tsp pepper
How to make Broccoli Cheese Casserole
Step 1: Prepare the oven. Preheat it to 350 degrees F.
Step 2: In a steaming basket, place the broccoli. Steam on the stove for about 5 minutes or until the broccoli is fork-tender. When done, take the broccoli from the stove and chop them into bite-sized pieces, then transfer in a medium-sized mixing bowl.
Step 3: Add the soup to the broccoli along with the mayonnaise, butter, eggs, onion, salt, and pepper. Stir well, then add 3/4 c. of cheese. Mix again until blended.
Step 4: Into an 8 x 8-inch square baking dish, pour the contents of the bowl and top with the rest of the 3/4 c. cheese and Ritz crackers.
Step 5: Place in the preheated oven and bake for about 30 minutes or until the cheese has melted and the top is golden.
