I love these Broccoli Cheese Bites. It’s one of my favourite and go-to appetizers for parties or entertaining even at brunch. These bites are perfect to serve warm even excellent at room temperature. If you love Ritz broccoli casserole, I am pretty sure you’ll enjoy this bite-sized version.

This recipe is incredibly easy and quick to throw together using only four ingredients! Yes, this takes just four pantry ingredients to whip up. Ready in less than twenty minutes, these bites surely are a must and a keeper! Feel free to add chicken to these bites if desired. Although, this time, I prefer to go full vegetarian. But I assure you it’s amazing no matter what! Serve these bites as an appetizer or if using chicken, you can have a meal in one!

With the same melted cheese and crunchy Ritz cracker on top just like the casserole version, you sure will not miss its counterpart. So do not underestimate these bad boys. They might be small but big in flavour!

INGREDIENTS

2 c. broccoli, cooked and chopped

1 c. cheddar cheese

12 Ritz crackers, crumbled

1 Egg

How to make Broccoli Cheese Bites

Step 1: Prepare the oven. Preheat it to 350 degrees. And using a nonstick baking spray, grease a muffin tin.

Step 2: In a food processor, place the cooked broccoli, cheese, 10 Ritz crackers, and egg. Blend until well combined.

Step 3: To the prepared muffin tin, spoon the mixture to about 3/4 full and sprinkle each with the Ritz crackers.

Step 4: Place in 350 degrees preheated oven and bake for about 12 to 15 minutes until the top of the crackers turned a little brown and the mixture is thoroughly cooked.

Step 5: Remove from the oven when done and serve the bites hot or at room temperature. Enjoy!
