Ingredients
4 small chicken breast
3/4 c broccoli, chopped
1/2 c shredded cheddar cheese
2 oz cream cheese, softened
2 tsp Cajun seasoning
How to make Broccoli Cheddar Stuffed Chicken
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: Combine the broccoli, cheddar cheese, and softened cream cheese in a small bowl. Set aside.
Step 3: In lengthwise, slice each chicken breast but make sure not to cut all the way through.
Step 4: On one side of the chicken, spread the broccoli cheddar mixture, then fold one side over. Using a toothpick, secure the filling.
Step 5: Sprinkle the entire chicken with Cajun seasoning.
Step 6: Transfer the chicken to a greased baking dish. Bake for about 25 to 30 minutes or until the chicken has been cooked through.

For this recipe, I used fresh, raw, and chopped broccoli.
