BROCCOLI CASSEROLE ULTRA EASY AND ULTRA CHEESY

This is a must on every holiday. Broccoli cheese casserole with a crunchy Ritz cracker topping is just wow! My family loves this so much I have to make this even on normal days! And my pickiest eaters enjoy this delicious casserole, so that’s a big plus for me.

There are many variations you can do. Although I like this casserole so much the way it is, I am always tempted to try different variants. Like making this with cauliflower or green beans instead of broccoli. Or instead of cream of chicken, I use cream of mushroom to alter the flavour. The secret is not to be afraid to explore.

Ingredients

3-4 crowns fresh broccoli, cooked and drained

1 c real mayonnaise

1 can, cream of chicken soup

4 tbsp butter, melted

1/4 c diced white onion

2 Eggs

1 tsp salt

1/4 tsp pepper

1-1/2 c shredded sharp cheddar cheese

1 sleeve, Ritz crackers, crushed

HOW TO MAKE BROCCOLI CASSEROLE ULTRA EASY AND ULTRA CHEESY

Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.

Step 2: Apply cooking spray in a 9×13-inch baking dish.

Step 3: Slice the broccoli into small cuts.

Step 4: Steam the broccoli until fork-tender.

Step 5: Place the broccoli into a casserole dish and spread them on the bottom.

Step 6: Add mayonnaise, melted butter, sliced white onion, and cream of chicken soup into a mixing bowl. Stir until combined.

Step 7: Add 1 cup of shredded cheese, eggs, salt, and pepper. Whisk until well combined.

Step 8: Pour the mixture on top of the broccoli and toss until well coated.

Step 9: Add more shredded cheese over the broccoli.

Step 10: Top everything with Ritz crackers.

Step 11: Place it inside the preheated oven and bake for about 40 minutes or until done.

Step 12: Remove from the oven and let it rest for a few minutes.

Step 13: Serve and enjoy!
