2 tbsp sesame oil
4 chicken breasts
¼ c. water
¼ c. apple juice
½ tsp onion powder
½ c. soy sauce
¼ c. ketchup
½ tsp ground ginger
3 tsp garlic minced
⅔ c. brown sugar
½ tsp pepper
⅛ to ¼ tsp red pepper flakes optional
1 tbsp cornstarch + 1 tsp
How to make Bourbon Chicken
Step 1: Into bite-sized pieces, chop the chicken breasts, then pat them dry using a paper towel. Place the pieces of chicken in a large bowl with 1 tbsp cornstarch.
Step 2: Heat the sesame oil in a large skillet over medium heat. Once the oil is hot, add the chicken to the skillet and cook until no longer pink. When done, drain juices from the pan. Place the skillet back on the stove and continue to cook the chicken on medium heat until both the chicken and the bottom of the skillet are browned.
Step 3: Whisk the pepper, apple juice, ketchup, soy sauce, water, brown sugar, ground ginger, minced garlic, water, and 1 teaspoon cornstarch in a medium bowl until well mixed.
Step 4: To the pan, add the sauce mixture once the chicken has browned. Deglaze the bottom of the pan using a spoon, getting all the browned bits off. Allow the sauce to boil.
Step 5: Adjust the heat to low once the sauce is boiling and simmer for about 5 to 7 minutes, stirring occasionally.
Step 6: Take the pan off the heat and let the sauce sit for about 5 minutes to allow it to thicken further. Then, serve the bourbon chicken over white rice. Enjoy!
TIPS:
To let the chicken brown easily, use a large skillet pan.
Make sure to completely thaw the chicken before using it.
You can substitute 1/4 cup apple juice with ¼ cup of bourbon.
