This Butter Cake with a simple, luscious Fudge Icing is the perfect cake for all occasions! I plan on making this on my daughter’s birthday this coming month. I’m pretty sure she’ll love it!
Ingredients
2/3 cup soft butter
1 3/4 cup sugar
2 Eggs
1 1/2 teaspoons vanilla
3 cup sifted cake flour (must use cake flour)
2 1/2 teaspoons baking powder
1 teaspoon salt
1 1/4 cups milk
Fudge Icing:
2 squares unsweetened chocolate
1/2 cup milk
2 cups sugar
1 stick butter
How to make Bonnie Butter Cake with Fudge Icing
Step 1: Prepare the oven. Preheat it to 350 degrees. Grease well and flour three 8 x 1 1/2-inch cake pans or two 9 x 1 1/2-inch square or 12 x 9 x 2-inch oblong pans.
Step 2: At high speed or by hand, beat the butter, sugar, eggs, and vanilla for about 5 minutes until fluffy.
Step 3: Sift the flour, baking powder, and salt.
Step 4: Add the dry ingredients alternately with the milk in 4 additions, beginning and ending with the dry ingredients. Beat on low speed until smooth.
Step 5: Place in the preheated oven and bake for about 30 to 35 minutes (if using an oblong pan, bake for approximately 45 to 50 minutes).
Fudge Icing:
Step 6: After melting the butter and chocolate, stir in the sugar and milk. Continue to heat until the sugar has melted. Allow the mixture to boil for about 5 to 6 minutes until soft ball forms. Add half tsp vanilla and stir until the icing is cool enough.
NOTE:
On the first and second layers, put the icing while still a bit runny. Then, pour the icing over the cake once it begins to stay well. To catch the drippings, I suggest putting a waxed paper on the bottom edges of the cake.
