Blueberry Zucchini Bread

Blueberry and zucchini together are just too perfect! Oh, man, you have got to give this recipe a try! This bread is not only very delicious but it also very easy to make. Just follow all the steps for they will guide you to perfection! Don’t forget to share this recipe with your loved ones. Enjoy!

Ingredients:

3 Eggs, lightly beaten

1 cup of vegetable oil

3 teaspoons vanilla extract

2 1/4 cups white sugar

2 cups shredded zucchini

3 cups all-purpose flour

1 teaspoon salt

1 teaspoon baking powder

1/4 teaspoon baking soda

1 tablespoon ground cinnamon

2 cups fresh blueberries

Directions

Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.

Step 2: Apply cooking spray on two loaf pans.

Step 3: In a large mixing bowl, add the eggs, sugar, oil, and vanilla. Beat until well combined.

Step 4: Add in the zucchini and stir until well mixed.

Step 5: In a medium mixing bowl, add the flour, baking powder, baking soda, cinnamon, and salt. Stir until well mixed.

Step 6: Transfer the flour mixture into the egg mixture and beat until well combined.

Step 7: Add in the blueberries and stir until well mixed.

Step 8: Transfer the batter into the prepared loaf pans.

Step 9: Place the loaf pans inside the preheated oven and bake for 1 hour or until a toothpick comes out clean after inserting it in the middle of the cakes.

Step 10: Remove the bread from the oven and allow them to cool at room temperature for about 20 minutes.

Step 11: Remove the cakes from the pans and place them on wire racks and allow them to cool completely.

Step 12: Serve and enjoy!
