I have friends who don’t like sushi so whenever we have sushi night at home I make sure to make a sushi-like dish. And this BLT Sushi fits in all the right places! We all are crazy over BLT! Though this is not technically areal sushi, simply bacon rolled around some lettuce and tomatoes, still, we love to call it sushi. This super fun recipe is surely a must!

10 slices bacon
2 tablespoons mayonnaise
1 cup chopped tomatoes
1/2 avocado, diced
1 cup shredded romaine
Kosher salt
Freshly ground black pepper
How to make BLT Sushi
Step 1: Prepare the oven. Preheat it to 400 degrees.
Step 2: Over a large baking sheet, position a wire rack.
Step 3: On the wire rack. Lay 5 bacon slices side by side. Grab one end of every slice of bacon, lift, then place another slice on top. Lay the slices back. Now, do the same on the opposite bacon slice. Repeat until you have 5 strips by 5 strips bacon weave.
Step 4: On the prepared baking sheet, transfer the bacon weave. Place in the preheated oven and bake for about 20 minutes until cooked but the bacon is still pliable.
Step 5: Using paper towels, carefully pat the bacon weave to drain the excess fat. Shift the bacon weave on a piece of plastic wrap for easy rolling.
Step 6: On top of the bacon weave, spread a thin layer of mayo. Add tomatoes and avocados at the top-bottom third of the bacon weave. Sprinkle with romaine and season with salt and pepper.
Step 7: Tightly roll the bacon weave, beginning from the bottom, then slice the roll crosswise like sushi.
