BETTER THAN TAKEOUT FRIED RICE

Prep time: 8 mins | Cook time: 12 mins | Total time: 20 mins | Yield: 6-8 servings

I am always mesmerized by Chinese fried rice because they look tasty and inviting. Just like this fried rice, that is better than taking out! Flavorful, simple with a few ingredients, and taste amazing! There are many varieties, but this one is my favourite. And you can add chicken pieces if desired.

Ingredients

3 tablespoons butter, divided

3 Eggs, lightly beaten

1 large carrot, peeled and cubed

1 small white onion, chopped

3 cloves garlic, minced

4-5 cups cooked and chilled rice

1 cup frozen peas

4 green onions, thinly sliced

¼ cup soy sauce (plus more to taste)

2 teaspoons sesame oil

3 teaspoons oyster sauce

salt and pepper

HOW TO MAKE BETTER THAN TAKEOUT FRIED RICE

Step 1: Heat over medium heat a large skillet or wok.

Step 2: Add and melt a tbsp butter into the preheated pan.

Step 3: Cook beat eggs into the skillet with melted butter for about 30 to 40 seconds or until set and scramble.

Step 4: Once the eggs are completely cooked, take them out of the pan and set aside.

Step 5: Then, add in the rest of the butter into the skillet and saute the carrot and onion until tender.

Step 6: Stir in the garlic and continue to cook until fragrant.

Step 7: Adjust the heat up a bit and add in the cold rice and peas.

Step 8: Continue to cook for 3 to 4 minutes more. Wait until it sizzles and browns a bit before adding in the eggs, green onion, soy sauce, sesame oil, and oyster sauce. Remain cooking for several minutes or until hot. And season with salt and pepper.

Step 9: When done, serve immediately.

Note:

Recommended but optional, add about 1 to 2 tbsp soy sauce.
