This is the best strawberry cake! Drenched in a mixture of white chocolate strawberry sauce and topped with strawberry pie filling and creamy whipped cream, this tender and fluffy Strawberry Poke Cake is a beauty and each bite just melts in your mouth.
Ingredients
1 box white cake mix (plus ingredients to prepare the mix)
3 Eggs whites
1 c. water
1/3 c. vegetable oil
Strawberry White Chocolate Mixture:
14 ounces sweetened condensed milk
3/4 c. white chocolate chips
1 package (3 ounces JELL-O strawberry flavour gelatin)
1/4 c. warm water
Other ingredients:
2 cans (21 ounces each strawberry pie filling)
2 c. heavy whipping cream (full fat and cold)
2 tbsp sugar
1 tsp vanilla extract
10-15 fresh strawberries (sliced)
How to make Best Strawberry Poke Cake
White Cake:
Step 1: Prepare the oven. Preheat it to 350 degrees F.
Step 2: Grease a 9x 13-inch cake pan and sprinkle with flour.
Step 3: According to the box instruction, prepare the white cake mix. Into the prepared pan, pour the batter. Place inside the preheated oven and bake for about 25 to 30 minutes. Do a toothpick test to see if the cake is perfect.
Step 4: Remove from the oven and allow the cake to cool for at least 10 minutes. Poke holes on the entire cake using the bottom of a wooden spoon.
Strawberry White Chocolate Mixture:
Step 1: Combine the white chocolate chips and sweetened condensed milk in a medium microwave-safe bowl. Heat for a minute in the microwave. Stir and if needed, heat for another 30 seconds. Then, stir well until completely combined and the mixture is smooth and shiny.
Step 2: Into warm water, whisk in the strawberry gelatin mix until fully dissolved. Stir this into the condensed milk mixture until incorporated and smooth.
Step 3: An the entire cake, pour the strawberry chocolate mixture and evenly spread it into the holes using a spatula.
Step 4: Cool completely, then refrigerate the cake for at least an hour.
Other layers:
Step 1: If using, top the cake with strawberry pie filling.
Step 2: To make the whipped cream, beat the heavy cream, sugar, and vanilla extract in a large bowl until stiff peaks form.
