BEST EVER TROPICAL FRUIT SALAD

My mom reminds me of this Tropical Fruit Salad. This is her favourite, no questions asked. The extraordinary combination of citrus juices with honey is impressive. And how can I forget the magical citrus poppy seed dressing? And to pump this up a notch, we added some special ingredients for that slight nuttiness and a punch of zestiness. This is no doubt the best tropical fruit salad you’ll ever make!

INGREDIENTS

12 mandarin oranges, divided (for dressing and salad)

2 c. strawberries, sliced

1 pineapple, cut into bite-size chunks

5 kiwi, sliced

3 mangoes, cut into bite-size chunks

Citrus Poppy Seed Dressing:

1 medium lemon

1 lime

1/4 c. honey

1/2 tsp Gourmet Garden Ginger Paste or freshly grated ginger

1/2 tsp poppy seeds

HOW TO MAKE THE BEST EVER TROPICAL FRUIT SALAD

Step 1: Wash the lemon, lime, and 2 pieces of mandarin oranges, then dry. Using a zester or fine grater, zest the washed and dried citrus, then place either to a cup measuring cup or small bowl.

Step 2: Into the measuring cup, squeeze the juice, and get about half a cup of juice. To the cup with the juice mixture, add the honey, ginger, and poppy seeds. Stir to mix. If serving later, set the cup aside in the fridge.

Step 3: Meanwhile, ready the rest of the fruit. Start by slicing the strawberries and kiwi, then sectioning the rest of the oranges. Into bite-size pieces, cut the pineapple and mango. And in a large bowl, place the fruits.

Step 4: Over the prepared fruits, pour the dressing at least 30 minutes before serving, then toss gently to coat.

NOTE:

This fruit salad recipe is super adaptable. You are welcome to use whatever you have available like carambola or star fruit and papaya. If using bananas, add them during the last minute.
