Cake:
1/2 c. vegetable oil
1 1/2 c. granulated sugar
3/4 c. milk at room temperature
3/4 c. unsweetened cocoa powder
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
1/4 c. Baileys Irish Cream Liqueur
2 large eggs at room temperature
1 3/4 c. all-purpose flour
1 c. boiling water or piping hot coffee
2 tsp vanilla extract
Frosting:
1 tsp cocoa powder
1 c. unsalted butter softened to room temperature
3 1/2 c. powdered sugar sifted to remove lumps
1-2 tbsp heavy whipping cream
2 tbsp Baileys Irish Cream Liqueur
shaved chocolate for garnish
a pinch of salt
How to make Best Ever Baileys Chocolate Cake
Step 1: Prepare the oven. Preheat it to 350 degrees F. Using butter, grease a 9 x 13-inch rectangular cake pan, then line with parchment paper. Set aside.
Step 2: Combine the sugar, flour, cocoa powder, baking soda, baking powder, and salt in a large bowl until well mixed.
Step 3: To a large liquid measuring cup, add the milk, Baileys, vegetable oil, eggs, and vanilla. Stir using a fork.
Step 4: Into the dry ingredients, stir in the wet ingredients just until the streaks of flour vanishes.
Step 5: Slowly add the boiling water or hot coffee, stirring until incorporated.
Step 6: Into the prepared pan, pour the batter. Place in the preheated oven and bake for about 30 minutes or until a toothpick inserted in the centre of the cake comes out clean.
Frosting:
Step 7: Using a hand mixer, beat the butter at medium-high speed. Or use your stand mixer fitted with a paddle attachment until the butter is light and fluffy. Then, add the powdered sugar along with the cocoa powder and beat until well mixed.
Step 8: Next, add the salt and Baileys. Beat on medium-high speed until well blended.
Step 9: Begin adding the whipping cream about 1 tbsp at a time until the frosting is smooth and fluffy.
Step 10: On the completely cooled cake, spread the frosting and smooth out the top. On top of the cake, shave some dark chocolate.
Step 11: Slice the cake and serve. Enjoy!
