2 lbs ground beef
1 c. tomato, finely chopped
3/4 c. whole milk
1/2 c. sour cream
1 3/4 c. biscuit mix or Bisquick
2 c. lettuce, chopped or shredded
2 c. sharp cheddar cheese, grated
1 (1 ounce) packet of taco seasoning
Kosher salt and freshly ground pepper, to taste
Black olives, sliced, optional
How to make Cheesy Taco Casserole
Step 1: Prepare the oven. Preheat it to 400 degrees F. Using a nonstick spray, lightly grease a 9 x 13-inch baking dish.
Step 2: Place the eggs and milk in a large bowl. Mix well until blended. Add the biscuit mix. Combine and season with salt and pepper. Set aside.
Step 3: With salt and pepper, season the beef and cook until no longer pink. Drain the excess grease and stir in the taco seasoning.
Step 4: Into the prepared baking dish, place the beef in an even layer. On top, evenly spread the biscuit mix. Place in the preheated oven and bake for about 22 to 25 minutes or until golden brown.
Step 5: When done, remove from the oven and allow the casserole to cool for about 10 minutes. Then, spread the sour cream on top. Before serving, top the casserole with some chopped lettuce, tomatoes, and olives (optional). On top, sprinkle the cheddar cheese. Enjoy the casserole hot!
