1 or 2 1/2 lbs pork tenderloins (see note)
1 tbsp oil
2-3 tbsp fresh lemon, lime, or orange juice (or 1 tbsp of each)
2 tsp Italian seasoning
1 tsp garlic powder
1 tsp cumin
1 tsp salt
1 tsp chilli powder
1/2 tsp smoked paprika (optional but highly recommended)
HOW TO MAKE BEST BAKED PORK TENDERLOIN
Step 1: Prepare the oven. Preheat it to 400 degrees.
Step 2: Use a fork to pierce the tenderloins and coat with oil.
Step 3: In a small bowl, add the Italian seasoning, garlic powder, cumin, salt, chilli powder, smoked paprika, and black pepper. Whisk to incorporate.
Step 4: Sprinkle and pat the mixture onto the entire meat surface.
Step 5: Put the seasoned tenderloins on a lightly greased large baking or casserole dish and drizzle with lemon or lime juice.
Step 6: Place inside the preheated oven and bake for about 25 to 35 minutes or until browned, crispy, and the middle of the tenderloins are cooked through. If you prefer the middle still a bit pink, take the tenderloins out of the oven a little early.
Step 7: Spoon the juices on top of the meat and let them sit on the baking dish for at least 5 to 10 minutes or transfer on a cutting board to rest.
Step 8: When ready to serve, cut the meat into inch pieces and spoon the rest of the juices from the pan on top of the slices. If desired, garnish with fresh cilantro. Enjoy!
NOTE:
Use 1 to 2 very small pork tenderloins or medium-large tenderloins or double/triple the seasoning ingredients. This recipe is pretty flexible.
