1 or 2 ½ lb pork tenderloins
1 tbsp oil
2-3 tbsp fresh lemon, lime, or orange juice (or 1 tablespoon of each)
2 tsp Italian seasoning
1 tsp garlic powder
1 tsp cumin
1 tsp salt
1 tsp chilli powder
½ tsp smoked paprika (optional but highly recommended)
¼ tsp black pepper
How to Make the BEST Baked Pork Tenderloin
Step 1: Prepare the oven. Preheat it to 400 degrees. Ready a large baking casserole dish, grease, and set aside. Using a fork, pierce the tenderloins, then coat both sides with oil.
Step 2: In a small bowl, mix the Italian seasoning, garlic powder, cumin, salt, chilli powder, black pepper, and if using smoked paprika. Sprinkle this over the tenderloin and pat on all sides of the meat. Into the prepared baking dish, place the tenderloins and drizzle with lemon/lime juice.
Step 3: Place in the preheated oven and bake for about 25 to 35 minutes until the centre is cooked through according to your preferred doneness and the outside is brown and crispy.
Step 4: Remove the tenderloin from the oven when done and spoon the juices over the meat. On a cutting board or baking dish, allow the tenderloin to rest for at least 5 to 10 minutes before slicing into inch pieces. Over the slices, spoon the leftover juices from the pan. If desired, garnish with fresh chopped cilantro. Serve and enjoy!

For this recipe, you can use either 1 to 2 very small pork tenderloins or a medium-large, even double or triple the seasoning ingredients if serving a crowd.
