1 package pork tenderloins, trimmed (comes with 2 pieces, 2 – 2 ½ pounds total)
1/4 c. kosher salt
4 c. warm water
2 tbsp apple cider vinegar
2 tbsp brown sugar
1 c. ice cubes
2 tbsp lemon juice
3 tbsp butter sliced into 6 pads
SPICE MIX:
1 tbsp EACH chilli powder, garlic powder
1 teaspoon EACH salt, onion powder
1/2 tsp smoked paprika
1/4 tsp pepper
HERBS TO ADD LATER:
1/2 teaspoon EACH dried parsley, dried basil, dried oregano, dried thyme
HOW TO MAKE THE BEST BAKED PORK TENDERLOIN
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: On a baking sheet, lay two long pieces of foil.
Step 3: Combine the salt and warm water until dissolved. Add in the apple cider vinegar, brown sugar, and ice. Whisk to combine. Add the pork to the brine and let it sit for exactly 20 minutes. Take the pork out of the brine, rinse well, then pat dry. Make sure the pork is quite dry.
Step 4: In a small bowl, combine the spice Mix ingredients except the herbs to add later. Then, evenly coat the pork with the spice mix.
Step 5: In a large skillet, heat 2 tbsp oil over medium-high heat. Once the oil is hot, add the pork tenderloins and sear until golden. If needed, work in batches. Place the seared pork on the foil.
Step 6: With the rest of the herbs (parsley, basil, oregano, thyme), sprinkle the tops of the pork tenderloins evenly, rubbing it into the pork to coat. Drizzle the pork with a tbsp lemon juice and top each with 3 pads of butter.
Step 7: Completely enclose the foil onto the pork by bringing the sides of the foil up.
Step 8: Place inside the preheated oven and bake for about 15 to 25 minutes until the internal temperature reached between 145 to 150 degrees F or 63 to 65 degrees C. The cooking time varies depending on the thickness of the tenderloin.
Step 9: Loosen the foil once the pork is done and sit for at least 5 to 10 minutes before slicing. To taste, season with extra salt and pepper. Enjoy with the collected butter sauce in the bottom of the foil.
Note:
Unwrap the foil carefully to check the temperature of the pork. If the tenderloin needs to continue baking, wrap the foil back up.
