Berry Walnut Spinach Salad with Maple Vinaigrette

This is the best summer salad that I love to whip up all year round! A healthy bowl of Berry Walnut Spinach Salad made with fresh spinach, berries, and walnuts tossed in a simple Maple Vinaigrette.

If you love everything salad as I do, I am pretty sure that you’ll dig this easy-to-make salad with fresh spinach, juicy berries, crunchy walnuts topped with a sweet dressing made from real maple syrup! This is the perfect salad for warm weather. Welcome summer or end it with a bang with a healthy dose of freshness from this impressive salad.

In truth, I make this salad whenever I want or need something quick, easy, and healthy lunch. I have the busiest schedule most of the days, and this saves me a lot of time. Plus, this is share-worthy!

Ingredients

Salad:

6 c. fresh spinach, washed and dried

1/3 c. red onion, thinly sliced

1 c. fresh blackberries, washed and dried

1 c. fresh strawberries, washed, dried, and sliced

1/3 c. raw walnuts, chopped

Dressing:

3 tablespoons real maple syrup

2 tablespoons balsamic vinegar

1 tablespoon olive oil

1 teaspoon Dijon mustard or any other vegan substitute

a pinch of sea salt

How to make Berry Walnut Spinach Salad with Maple Vinaigrette

Step 1: To a large bowl, add the spinach and top with the sliced red onions, blackberries, sliced strawberries, and walnuts.

Step 2: To a mason jar, add maple syrup, balsamic vinegar, olive oil, Dijon mustard, and salt. Put the lid on, making sure to tightly seal it. Shake the jar well until everything is combined.

Step 3: Over the salad, pour the dressing and toss to combine.

Step 4: Serve this salad straight away or store the salad and dressing separately in the fridge. When ready to serve, toss everything. Enjoy!
