Topped with bundles of fresh strawberries and blueberries, this French Toast casserole is super easy to put together. You’ll go crazy over this delicious casserole and you’ll love its moist interior and slightly crusty top.

My ultimate favourite weekend brunch with sprinkles of sugar on top and drizzles of maple syrup all over. Prepare this the night before, pop in the oven in the morning. Enjoy this with a cup of coffee or freshly squeezed juice with family and friends.

Ingredients

12-14 c French bread

8 large Eggs

2 c 2% milk

2 teaspoons vanilla extract

1 teaspoons cinnamon

2/3 c brown sugar

1 c strawberries sliced

1/2 c blueberries

1-2 tablespoons powdered sugar

maple syrup (as much as you want!)

How to make Berry French Toast Casserole

Step 1: Use vegetable oil or butter to grease a 9 x 13-inch casserole.

Step 2: Slice the French bread into cubes.

Step 3: Fill the casserole up to 3/4 of the cubed French bread.

Step 4: Combine the eggs, milk, vanilla extract, cinnamon, and brown sugar in a large bowl. Whisk to combine, then pour into the casserole.

Step 5: Part the strawberries in half and add on top of the casserole with blueberries.

Step 6: Use saran wrap to clothe the casserole and place in the fridge to set for at least 4 hours or overnight.

Step 7: When ready to serve, prepare the oven. Preheat it to 350 degrees F.

Step 8: Bake the casserole in the preheated oven for about 35 to 40 minutes.

Step 9: Once done, remove from the oven and sprinkle with powdered sugar.

Step 10: This casserole is best to serve with maple syrup. Enjoy!
