Beef Stir Fry with Noodles

This beef stir fry with noodles comes together in a cinch. A delicious weeknight meal with tender beef, fresh veggies, and noodles in a savoury sauce that’s very simple to make and ready in under twenty minutes!

Ingredients

Sauce/marinade:

4 cloves garlic minced

2/3 c. reduced-sodium soy sauce

2 tbsp brown sugar

2/3 c. beef broth

1 tsp cornstarch

2 tsp minced ginger

Stir fry:

4 tsp canola oil divided

16 oz. boneless beef sirloin steak sliced thin

16 oz. Linguine noodles

1 onion sliced thin

2 carrots sliced into match-sticks

1 red bell pepper sliced thin

2 c. cabbage shredded

2 c. broccoli florets

red pepper flakes to taste (optional)

sesame seeds to taste (optional)

How to make Beef Stir Fry with Noodles

Step 1: In a small mixing bowl, whisk the soy sauce, broth, brown sugar, garlic, and ginger until well mixed. In a gallon-sized Ziploc bag, add half of this mixture along with the sliced beef. Press as much air from the bag before sealing. Keep in the fridge to marinate the meat for at least 2 hours.

Step 2: To the rest of the mixture in the bowl, add the cornstarch and whisk until smooth. Cover the bowl and place it in the fridge until ready to use.

Step 3: Following the package directions, cook the linguine noodles.

Step 4: In the meantime, heat 2 tsp oil in a large skillet over medium-high heat. Once the oil is hot, add the steak slices to the skillet, discarding the excess marinade. Stir fry the meat until just browned. When done, set the steak aside.

Step 5: To the same skillet, add the rest of the oil. Add the peppers, onion, carrots, and broccoli to the skillet and stir fry until the veggies have softened and clear. Then, add the cabbage and continue to cook further until soft.

Step 6: Drain the noodles when done cooking and toss it with the beef/vegetable mixture. Add the reserved sauce mixture and toss again until the noodles are completely coated. If desired, garnish the stir fry with sesame seeds and/or red pepper flakes.

Step 7: Serve right away. Enjoy!
