This Beef Noodle Casserole is very comforting and excellent if you are planning to feed a big crowd. The beef and noodle are tossed in a rich tomato sauce topped with melted cheese. The best part is, this casserole is super easy to throw together using readily available ingredients, it is kid-friendly and ready in a breeze!

2 tsp olive oil
12 oz. egg noodles uncooked
1 1/4 pounds lean ground beef I use 90% lean
1 onion finely chopped
16 oz. canned tomato sauce
2 tsp Italian seasoning
2 c. shredded cheddar cheese
2 tsp minced garlic
salt and pepper to taste
cooking spray
15 oz. can diced tomatoes drained, I prefer to use the small diced (petite cut) variety
2 tbsp chopped parsley
How to make Beef Noodle Casserole
Step 1: Following the package directions, cook the egg noodles in a pot of boiling salted water until al dente.
Step 2: Meanwhile, prepare the oven and preheat it to 400 degrees F.
Step 3: In a large pan, heat the olive oil over medium-high heat. Once the oil is hot, add the ground beef to the pan and cook for about 4 to 5 minutes, breaking the meat into pieces using a spatula as it cooks.
Step 4: To the pan, add the onion and garlic. Continue to cook for another 5 minutes or until the onion has softened and the beef is completely cooked. To taste, season with salt and pepper.
Step 5: Stir in the tomato sauce, tomatoes, and Italian seasoning until blended.
Step 6: When the noodles are done, drain and toss with the beef in the pan to coat.
Step 7: Into a greased 9 x 13-inch baking pan, pour the beef and noodle mixture and top with cheddar cheese. Place in the preheated oven and bake for about 10 to 15 minutes or until the cheese has melted.
Step 8: Remove from the oven when done and serve garnished with parsley. Enjoy!
