This perfectly baked casserole with ground beef and noodles in a rich tomato sauce topped with plenty of cheese is everyone’s favourite comfort food, excellent for busy days, super cheesy, kid and family-friendly, and a breeze to whip up.

2 tsp olive oil
12 oz. egg noodles uncooked
2 c. shredded cheddar cheese
1 1/4 pounds lean ground beef I use 90% lean
2 tsp minced garlic
1 onion finely chopped
15 oz. can diced tomatoes drained, I prefer to use the small diced (petite cut) variety
16 oz. canned tomato sauce
2 tsp Italian seasoning
2 tbsp chopped parsley
cooking spray
salt and pepper to taste
How to make Beef Noodle Casserole
Step 1: Following the package directions, cook the egg noodles in a pot with salted boiling water. In the meantime, prepare the oven and preheat it to 400 degrees F.
Step 2: In a large pan, heat the olive oil over medium-high heat. Once the oil is hot, add the ground beef to the pan and cook for about 4 to 5 minutes, breaking the meat using a spatula.
Step 3: To the pan, add the onion and garlic. Continue to cook for another 5 minutes or until the onions have softened and the beef is completely cooked. To taste, season with salt and pepper.
Step 4: To the beef, add the tomato sauce along with tomatoes and Italian seasoning. Stir well until incorporated.
Step 5: When the noodles are done, drain and add them to the pan. Toss to coat.
Step 6: Into a greased 9 x 13-inch baking pan, pour the beef and noodle mixture, then top with cheddar cheese. Place in the preheated oven and bake the casserole for about 10 to 15 minutes until the cheese has melted.
Step 7: Remove from the oven when done and serve the casserole immediately garnished with parsley. Enjoy!
