Beef:
1 lb. beef round cut into strips; or another TENDER cut
½ c. beef broth
¼ c. low sodium soy sauce
1 tsp brown sugar
1 tsp cornstarch
1 tsp dried onion powder
1 tbsp toasted sesame oil
minced fresh garlic and minced fresh ginger to taste
½ tsp dried garlic powder or more to taste
¼ tsp ground ginger or more to taste
Broccoli:
1 lb. broccoli in florets
1 tbsp oil
How to make Beef and Broccoli Stir Fry
Step 1: In a medium bowl, combine the beef broth, soy sauce, sesame oil, brown sugar, cornstarch, and spices (and fresh garlic/ginger, if using). Add the beef and toss. Set aside to marinate the beef.
Step 2: In a large saute pan, heat a tbsp oil over medium heat. Once the oil is hot, add the broccoli to the pan. Saute for about 5 minutes or until just tender. When done, transfer the broccoli to a plate.
Step 3: Adjust the heat to medium-high heat. To the same pan, add the beef with the marinade. Stir fry the beef for about 30 seconds to 2 minutes or until the meat is just cooked.
Step 4: Into the beef, stir the broccoli. Simmer everything for about 30 to 60 seconds or until the sauce has thickened. To taste, add more soy sauce or salt.
Notes:
For this recipe, I recommend using a tender cut of beef that quickly cooks.
You can substitute beef broth with chicken broth. Although the sauce will be less rich it will still be delicious!
Toasted sesame oil adds a nice flavour to this stir fry. If not available, simply use neutral oil instead. Before serving, sprinkle the dish with sesame seeds.
Swap brown sugar with honey or maple syrup or omit it completely if desired.
Feel free to use either fresh or frozen broccoli. If using frozen broccoli, defrost it first to avoid mushy stir fry.
Tips:
For best results, use the correct cut of beef and make sure they are cut into even strips.
To prevent the beef from getting tough, ensure not to overcook it. The same goes for the broccoli to keep it from getting smashed when you stir it into the beef and sauce.
I would not suggest marinating the beef overnight. We only need to get the flavour in them.
