1 tablespoon cornstarch
1/2 c. water
1/4 c. low sodium soy sauce
1/4 c. light brown sugar
1 tsp ginger grated
2 cloves garlic minced
1/4 tsp red pepper flakes
1 pound broccoli
1 pound flank steak
2 tablespoons olive oil
1 tablespoon sesame seeds
How to make Beef and Broccoli Stir Fry
Step 1: Add a tbsp cornstarch and half a cup of water in a small mixing bowl. Stir well until the cornstarch is dissolved.
Step 2: Into the bowl, add ¼ cup low sodium soy sauce, ¼ cup brown sugar, a tsp grated fresh ginger, 2 cloves minced garlic, and ¼ teaspoon red pepper flakes. Stir well until everything is incorporated. Set aside.
Step 3: Into bite-sized pieces, slice the broccoli and set aside.
Step 4: Against the grain, slice the flank steak into about 1/4-inch thin pieces. Set aside.
Step 5: Ready the skillet. Preheat it over medium heat. Add a tbsp olive oil. To the skillet, add in the broccoli florets and stir. Pour in about 2 tbsp water. Cover the skillet and cook for a couple of minutes until soft. Uncover and continue cooking until all the water is absorbed. Place the broccoli on a plate, then set aside.
Step 6: To the pan, add another tbsp olive oil. Adjust the heat to high, then add the beef in a single layer. Cook the beef for a couple of minutes until cooked through, stirring occasionally. You can simply scoop out the excess liquid from the meat and discard it.
Step 7: Adjust the heat to medium-low once the beef is cooked. Add the sauce mixture to the pan and stir. Continue to cook for a few minutes more until the sauce begins to bubble and has thickened. Stir in the broccoli, then sprinkle with sesame seeds.
Step 8: Serve with a bowl of rice. Enjoy!
Notes:
For this recipe, use only low-sodium soy sauce.
With a sharp knife, thinly slice the meat against the grain.
Cook the meat in a very hot pan. This way the meat will be cook quicker and keep the inside tender.
Ensure to scoop out the excess meat juice and discard it. You want to sear the meat not boil.
Add an extra 1 to 2 tbsp water at the end of the sauce becomes too thick. Or mix an extra tbsp cornstarch with 2 tbsp water, add to the skillet (if the sauce is too thin), and cook for a minute or two.
