Basic Cheesy Spinach Quiche with Bacon

This is hands down one of the best easy meal prep. Make this fabulous Quiche using frozen pie crust filled with spinach, Gruyere, caramelized onions, ham, bacon, and mushrooms. It’s savoury, super flavorful making this the perfect meal even if you have the pickiest eaters.

Ingredients

1 frozen pie crust deep dish

1 tablespoon butter

1 medium yellow onion, finely diced

1/2 c. diced cooked ham (I buy pre-diced from the grocery store)

6 slices bacon, cooked and crumbled

4 large Eggs

3/4 c. half and half

3/4 teaspoon kosher salt

1/4 teaspoon black pepper

1/8 teaspoon ground nutmeg

1 1/3 c. Gruyere cheese, shredded divided

1/2 10-ounces box frozen chopped spinach, defrosted and wrung out in paper towels to remove excess moisture

1/4 c. chopped canned mushrooms wrung out in a paper towel to remove excess moisture

fresh parsley, minced

How to make Basic Cheesy Spinach Quiche with Bacon

Step 1: Prepare the oven. Preheat it to 375 degrees F.

Step 2: Melt the butter in a medium skillet over medium to medium-high heat. Once the butter has melted, add the onions and ham to the skillet and cook for about 5 minutes while stirring occasionally until the edges of the ham are deeply caramelized and golden. When done, set the cooked onions/ham aside.

Step 3: In the same skillet, cook the bacon. Crumble, then set aside.

Step 4: On a microwave-safe plate, put the open box of frozen spinach. Over the frozen spinach, pour 2 teaspoons of water, then cover and heat in the microwave for about 6 minutes. To a mesh sieve or colander, transfer the defrosted spinach and set it aside to cool for a couple of minutes. Once cool enough to handle, press the spinach with a few paper towels to remove the excess moisture.

Step 5: Whisk the eggs and half and half to a medium mixing bowl until well mixed. Season with salt and pepper. Then, stir in the nutmeg, onions, ham, bacon, and spinach until everything is incorporated.

Step 6: To the same sieve or colander, place the chopped mushrooms and press using paper towels to get rid of the excess moisture. Into the egg mixture, add the mushrooms and a cup of shredded cheese. Mix well.

Step 7: Take the pie crust out of the freezer. Into the pie crust, pour the egg mixture, and sprinkle with the rest of the 1/3 cup shredded cheese. Place in the preheated oven and bake for about 40 to 45 minutes until the top is golden brown and the centre of the quiche is set. When done, remove from the oven and allow the quiche to sit for at least 5 minutes or so before slicing into 8 wedges. If desired, garnish with parsley. Serve and enjoy!
