This is a must for everybody! Kids-friendly, incredibly easy to make with ingredients that you already have on hand, simple, and tasty. Perfect to serve with sour cream or any of your favourite sauces. Insanely good, you’ll not stop until it’s all gone!
Do you have the pickiest eaters? I do! Men, it’s always a battle to ask them to eat healthily. So I have to get creative every time. But not all the time that I have time to prep meals especially during busy days. Thank goodness, a friend introduced me to this Basic Cauliflower Fritters. At first, I was hesitant because of the many years that I struggle to make the kids eat cauliflower. I was thinking that it’ll just be another waste but since this recipe requires only five ingredients and a total of twenty minutes to make, I immediately tried it. And I did not expect that the kids will devour these fritters like chips! From then on, these fritters have been their go-to snack and appetizer.
INGREDIENTS
5 c. chopped cauliflower florets
2 Eggs
½ c. all-purpose flour
½ teaspoon baking powder
salt and pepper to taste
vegetable oil for frying
How to make Basic Cauliflower Fritters
Step 1: Into the food processor, place the cauliflower and pulse until finely minced. When done, transfer the minced cauliflower into a large mixing bowl along with the rest of the ingredients and the vegetable oil. Toss until you have a pasta-like mixture. Feel free to add more flour, if the mixture looks a bit too soft and moist.
Step 2: Shape small, 1/3-inch thick patties. To measure, use an ice cream scoop. You can make the patties smaller or bigger depending on how you like them.
Step 3: In a little amount of vegetable oil, fry the patties for about 2 minutes on each side over medium heat.
Step 4: Enjoy these fritters with sour cream or your preferred sauce.
