BASIC BROCCOLI FRITTERS

PREP TIME: 15 mins | COOK TIME: 15 mins | TOTAL TIME: 30 mins | SERVINGS: 4

Kids approved delicious vegetarian dinner or lunch. These golden-brown Broccoli Fritters are a simple easy and quick meal perfect with a cool dollop of sour cream or yoghurt.

INGREDIENTS

1 pound steamed broccoli florets

2 jumbo Eggs

1/2 c shredded Parmesan cheese

4 tablespoons flour

1 garlic clove, minced

salt and pepper, to taste

vegetable oil, for frying

HOW TO MAKE BASIC BROCCOLI FRITTERS

Step 1: Bring to a boil a medium-sized pot with salted water.

Step 2: Add and cook the broccoli florets for about 5 minutes until fork-tender.

Step 3: Drain well and transfer the broccoli to a cutting board.

Step 4: Slice the broccoli florets into tiny pieces with a large sharp knife.

Step 5: Combine the chopped broccoli, eggs, Parmesan, flour, and garlic in a medium-sized bowl. To taste, season with salt and pepper. Stir well.

Step 6: Heat oil in a cast iron or non-stick pan over medium heat and swirl to coat the pan with oil.

Step 7: Add about 2 to 3 tbsp mounds of broccoli mixture into the pan. Using a spatula, slightly flatten the mounds and space them an inch apart.

Step 8: Cook for about 2 to 3 minutes, flipping the fritters once. Cook for another 1 to 2 minutes until golden brown and cooked through.

Step 9: Best serve warm with yoghurt or sour cream.

NOTES:

To bake broccoli fritters do steps 1 to 7, then place in a preheated 425 degrees F oven and bake for about 10 to 13 minutes.
