Barbecue Pineapple Chicken

My mom loves this barbecue pineapple chicken. The perfectly baked and caramelized chicken is super easy to throw together. Loaded with fresh pineapple chunks with a slight kick from the jalapenos. Feel free to use your favourite barbecue sauce. Serve this with rice or over a simple green salad for a satisfying meal that I am pretty sure everyone will ask for again and again!

Ingredients

1 onion large, sliced

2 pounds boneless skinless chicken breasts chopped

2 bell peppers red and or green, chopped

1 jalapeño seeded and diced

1/2 teaspoon salt

12 ounces pineapple chunks fresh or frozen-thawed

1/2 teaspoon black pepper

1 c. barbecue sauce of choice divided

How to make Barbecue Pineapple Chicken

Step 1: Prepare the oven. Preheat it to 400 degrees F. Using a cooking spray, grease a baking dish, and set it aside.

Step 2: In half, cut the onion and thinly slice. Into bite-size pieces, cut the bell peppers. Then, dice the jalapeno. Set everything aside.

Step 3: Add the chopped, bite-size chicken pieces in a bowl and add 2/3 cup of barbecue sauce. Toss to coat the pieces of chicken and set them aside for about 15 minutes.

Step 4: In a baking dish, arrange the sliced onions and top with the marinated pieces of chicken, bell peppers, and pineapple. Brush the tops with the rest of the barbecue sauce. Toss to coat, then sprinkle with diced jalapenos, salt, and pepper.

Step 5: Place in the preheated oven and bake for about 30 to 35 minutes, uncovered, until the internal temperature of the chicken reached 165 degrees F.

Step 6: When done, remove from the oven and serve the barbecue pineapple chicken right away. Do not forget to spoon the sauce and juices over the chicken. Enjoy!
